ESSENTIAL PURPOSE: To assume the role of Splashes ambassador and continually enhance the overall reputation of Splashes Restaurant and Splashes Bar (jointly called "Splashes"). This involves demonstrating strong ownership in pursuing excellence in hospitality, engaging guest service, impactful leadership, fostering a culture of relationships, as well as maintaining functionality and aesthetic appeal of Splashes. The incumbent will customarily and regularly exercise prioritization of multiple tasks and processes, use discretion and independent judgment while directing multiple managers and line-level employees to achieve desired results.

The expected base wage range for this position is: $97,900 to $108,200 per year. This position may be eligible for additional compensation according to the Company's policies, as they may be amended from time to time.

ESSENTIAL DUTIES, include but not limited to:

To continually demonstrate qualities in this senior leadership role of integrity, ethics, passion, innovation, continuous improvement, adaptability, flexibility and resilience.To set and maintain the highest standards for management and line level employees within service levels, knowledge of cuisine and beverage, and ambiance.
To demonstrate an engaging mindset in search of operational and organizational efficiency, and department productivity. To continually develop tools and solutions to that end.
To participate weekly in Splashes and Splashes Bar Manager floor shifts. To continuously interact with guests to ensure professional, personalized service throughout their meal and to personally enhance experience by offering recommendations (e.g., using skills like sommelier, etc.) in restaurant and bar. To understand, balance and appropriately prioritize own operational involvement vs. administrative work.
To hire, and continually train, schedule, support, develop, review, discipline, and/or terminate employees of all levels directly accountable to his/her position appropriately and timely in collaboration with HR.
To maintain highest possible levels of employee morale.
To promote collaboration and unison of front and back of the house teams. To overall develop meaningful professional relationship with own and resort's teams and contribute to reaching common Resort goals through diverse means of communication and participation.
To continuously communicate and collaborate with the Chefs and senior management to ensure efficient and professional service as well as quality product. To assist with development and costing out new food menus.
To actively monitor Splashes social media and hotel guest surveys and appropriately and timely respond. To share relevant feedback and appropriately follow up with team.
To continually monitor the visual appeal and functionality of Splashes furniture, fixtures, and equipment (FF&E). To ensure organization and cleanliness in the front and back of the house.
To continually work towards increased sales, potential revenue streams and involvement with marketing efforts such as seasonal programing in restaurant and bar.
To establish, implement and maintain Splashes and JC Resorts policies and procedures, as well as compliance.
To closely monitor labor, staffing standards and participate in weekly Labor meetings.
To continuously monitor and control departmental expenditures to ensure meeting operational standards while maintaining annual budget.
To fully understand functionality and optimize use of supporting computer systems: to champion Micros POS, OpenTable reservation system, OnTrack productivity tool, Kronos timekeeping system, and other supporting systems relevant to her/his role.
To inform resort staff of various hotel functions, to enable them to provide personalized service to restaurant guests.
To plan and oversee festivities for special holidays, private / buyout events in Splashes and special events (i.e. wine dinner).
To maintain adequate inventory of all necessary food and beverage supplies and equipment.
To assist, as directed, in preparing annual departmental Operational and Capital Expenditure budgets, according to the specifications set forth by the property Controller.
To monitor beverage inventory, including pars, variety, cost and end-of-month inventory to maintain adequate supply, quality, and profitability.
To manage, as directed, Splashes wine program and assist in developing new seasonal cocktails and beer lists.
To follow all specified procedures to correctly handle all cash, credit, and gift certificate transactions.
To participate in Resort's MOD program, and attend hotel functions, as directed.
To satisfactorily complete daily paperwork, as required, including logs and reports.
To properly and timely document Personnel\Payroll transactions, as directed, for processing in the Personnel office. To ensure HR trainings are communicated.
To ensure that schedules for staff are posted on a weekly basis.
To ensure safe work practices of all Food & Beverage staff, including compliance with company and departmental safety rules and regulations and the proper use and handling of all relevant equipment and machinery.
To conduct departmental safety training for all new Food & Beverage employees, before they begin to work.
To conduct regular departmental operations meetings, including weekly and quarterly monthly safety meetings, and safety area inspections
QUALIFICATIONS: High school diploma or equivalent required. High level of English fluency required. Must have minimum three years of experience in similar position in an establishment of comparable quality. Must have thorough knowledge of all aspects of restaurant and bar operations and budgets. Requires an overall knowledge of types of foods and cocktail recipes. Familiar with OSHA, SB198, local Department of Health regulations, and relevant current laws governing handling of hazardous substances. A valid food handlers card must be timely obtained upon hire and maintained in good standing, which time and expense may be compensable. A valid California Responsible Beverage Service certification is required. Valid California driver's license required. Proof of personal automobile insurance coverage required. Current CPR certification preferred. Hotel experience preferred.

SKILLS AND APTITUDES: Demonstrated ability to train staff and ensure luxury resort customer service. Strong verbal and written communication skills. Detail oriented. Organized and efficient. Safety-minded. High quality standards for production and service. Diplomatic and calm. Good team player. Customer service focus.

PHYSICAL / MENTAL DEMANDS: Stands/walks approximately 70% of shift. Sits at desk or in meetings approximately 30% of shift. Occasionally required to handle and move objects weighing up to 30 lbs. over short distances. Must be able to work well under pressure. Flexibility required to work long, sometimes irregular hours, including evenings, weekends and holidays. Frequent use of stairs, daily. Fast-paced work environment. Guest facing position that may handle conflict and/or encounter individuals who may be upset and emotional at times.

TRAVEL: This position is not expected to travel for work.

REMOTE WORK: This position is not eligible to work remotely. The candidate must be able to work in-person during normal business hours.
