PRIMARY PURPOSE:

It is the primary responsibility of the Executive Chef for Cucina Del Mercato inside Eataly to oversee the daily culinary operations of the food and beverage workstations while developing and maintaining the evolution of the food program to the highest quality. Oversight includes maintaining staffing, recipe, and inventory, supply management for the kitchen, overall cost controls, and ensuring excellence in guest satisfaction during the dining experience.

The Executive Chef inspires, motivates, ensures accountability of the team, and supports Company culture. All duties are to be performed in accordance with Food & Beverage Division standards and MGM Resorts policies, practices, and procedures as well as restaurant/station partner brand standards.

PRINCIPAL DUTIES AND RESPONSIBILITIES:

  • Owns, leads, and oversees daily Cucina Del Mercato station kitchen operations, fiscal budgets, labor productivity, scheduling, inventory control, guest service standards, and execution and development of menu strategies to produce both short-term and long-term profitability. Collaborate with front-of-house managers on the restaurant's and Stations' business plan and represent Eataly in divisional, property, or corporate meetings
  • Responsible for execution of policies, operating procedures, pricing initiatives, training programs, directives, menus, rules, and regulations for the Cucina Del Mercato staff. Owns Cucina Del Mercato's execution of F&B and/or company-wide initiatives and programs. Maintain the highest standards of health, sanitation, and cleanliness within all areas of the kitchen. Responsible for the completion of all company compliance training by the Cucina Del Mercato staff.
  • Manages Human Resources responsibilities for the kitchen to include: creating a work environment that promotes teamwork, performance feedback (coaching and counseling), recognition, mutual respect and employee satisfaction; quality hiring, training and succession planning process that encompass the company's diversity commitment; adherence to the company's status quo third party representation philosophy; compliance with company policies, legal requirements, employment law, and collective bargaining agreements
  • Interacts with guests to ensure satisfaction and enjoyment of dining experience. Reacts to any guest complaints and takes any appropriate action. Collaborate with the Sous chef and service team to ensure a seamless service experience between kitchen and dining room
  • Maintains excellent knowledge of venue's food & beverage products, menu items and equipment used to perform duties.
  • Perform other job-related duties as requested.

MINIMUM REQUIREMENTS:

  • Bachelor's degree in a related field, or equivalent experience
  • Two (2) or more years of prior relevant experience.

PREFERRED:

  • ​​ Previous experience working in a high-volume restaurant or quick service outlet.

KNOWLEDGE, SKILLS, AND ABILITIES:

  • Complete knowledge of health and safety regulations.
  • Knowledge of all products, menu items and equipment used to perform these duties.
  • Ability to execute on guidelines for proper staffing to maximize efficiency and minimize labor costs
  • Strong overall knowledge of menu preparation and presentation.
  • Excellent interpersonal skills to deal effectively with guests, management, employees and other outside contacts
