At AccorHotel, we are seeking an experienced and skilled Executive Steward to join our team. As a key member of our Food and Beverage department, you will be responsible for ensuring the smooth operation of our Stewarding Department, maximizing labor efficiency, maintaining budgeted labor costs, and guaranteeing safe working conditions.
Key Responsibilities:- Supervise and manage the daily kitchen utility operations and staff, including dish room operations, night cleaning, trash room, back dock cleaning and maintenance, employee cafeteria, main kitchen, all restaurant outlets, banquet events spaces, banquet pantries, banquet plating and food running for events.
- Monitor the inflow of ordered materials and the maintenance of current materials, ensuring compliance with all Food & Beverage policies, standards and procedures.
- Coordinate banquet plating and food running with Banquet Chef, enforcing proper breakdown procedures for banquets, restaurants, room service and employee cafeteria.
- Manage payroll administration, participate in the management of department's controllable expenses to achieve or exceed budgeted goals, and ensure compliance with all Food & Beverage policies, standards and procedures.
- Inspect supplies, equipment, and work areas to ensure efficient service and conformance to standards, scheduling events, programs, and activities, as well as the work of others.
- Conduct monthly and quarterly inventories of supplies, ensuring compliance with Health Department standards, and supervising main dish room shift operations, cafeteria and restaurant dish room operations.
- Interact with vendors and Health Department representatives as required, ensuring employees maintain required food handling and sanitation certifications, and recruiting, interviewing, selecting, hiring, and promoting employees in the organization.
- Ensure a safe and productive operation, scheduling all stewarding staff, and assuring compliance with Health Department standards, supervising and maintaining the sanitation of kitchen, cafeteria, store rooms, hallways, dock, and equipment.
- Work with Chef, Director of Event Services/Catering to anticipate equipment needs, participating in employee progress discipline procedures, soliciting employee feedback, utilizing an "open door" policy, and reviewing employee satisfaction results to identify and address employee problems or concerns.
- Must perform and train on all stewarding duties, ensuring MSDS and EHC Binder is updated and compliant, conducting monthly safety trainings for staff, and participating and supporting the hotel's ESG initiatives.
Requirements:
- Constant standing throughout shift
- Occasional lifting and carrying up to 40 lbs
- Occasional kneeling, pushing, pulling, lifting
- Occasional ascending or descending ladders, stairs and ramps
