Key Responsibilities:

Operational Management:

  • Direct daily culinary functions, ensuring food production aligns with established quality and quantity benchmarks.
  • Lead and mentor kitchen staff, including sous chefs, cooks, and support personnel, while managing shift schedules and monitoring labor costs.
  • Oversee food cost management and portion control to enhance profitability through strategic ordering and efficient production practices.
  • Maintain precise inventory documentation and manage procurement of food and kitchen supplies.
  • Organize storage areas to ensure optimal food preservation and minimize waste.
  • Conduct monthly inventory assessments utilizing appropriate management systems.
  • Ensure compliance with food safety and sanitation protocols among all kitchen personnel.
  • Implement and manage regular cleaning schedules to uphold cleanliness and order in kitchen and storage spaces.
  • Foster professional relationships with team members through a collaborative and positive work environment.
  • Facilitate timely order delivery during service, ensuring efficiency in dish presentation.

Qualifications and Skills:

  • Demonstrated experience as a Sous Chef or in a comparable role within a high-volume culinary setting.
  • Strong leadership capabilities and effective management skills.
  • Exceptional culinary expertise and familiarity with diverse cooking methodologies.
  • Knowledge of food safety and sanitation regulations.
  • Ability to thrive in a fast-paced, high-pressure environment.
  • Outstanding communication and interpersonal abilities.
  • Meticulous attention to detail and a passion for culinary excellence.
  • Culinary degree or equivalent experience is advantageous.
  • Proficiency in inventory management systems is essential.
  • Capability to endure extended shifts of 12-14 hours.
