Key Responsibilities

Oversee the Kitchen department while adhering to budgetary constraints and responding to operational realities.

Assist in formulating and executing policies and controls regarding Kitchen operations, focusing on minimizing waste, spoilage, and breakage; ensuring proper food handling and sanitation; and maintaining recipe and portion control standards.

Manage food costs by educating kitchen personnel on effective food preparation and handling techniques, guiding staff on managing leftover food items, and creatively utilizing surplus food.

Handle or support administrative tasks related to personnel and payroll efficiently. Ensure all kitchen and steward associates consistently meet uniform, grooming, and appearance standards.

Help develop and implement effective training programs aimed at enhancing staff skills and service quality for guests, including the proper use and maintenance of kitchen equipment.

Understand and enforce compliance with health department regulations and hotel sanitation and food handling protocols.

Ensure adherence to all recipes and product specifications, monitoring staff compliance.

Maintain open communication within the Kitchen, addressing staff suggestions and concerns, and working collaboratively to resolve issues. Keep kitchen and steward staff informed about food and beverage matters and overall hotel operations.

Participate in scheduled meetings and maintain regular communication with kitchen staff. Foster strong working relationships with food and beverage management and other hotel departments.

Conduct routine inspections of all kitchen and dishwashing areas, as well as coolers, to rectify any identified deficiencies.

Contribute to menu planning and development.

Inspect incoming fish, meat, and poultry to ensure freshness and compliance with specifications.

Prepare reports, proposals, and other communications as required.

Must possess flexible availability, including morning shifts for breakfast service.

Experience/Education

Prior experience in Food & Beverage within a hotel environment is essential. A High School Diploma is preferred. Proficiency in speaking, understanding, and reading English is required.
