We are seeking a highly skilled and experienced Executive Chef to lead our culinary team at Hotel La Jolla, a premier hospitality destination. Key Responsibilities:
  • Supervise and assist in the preparation of all food items based on standardized recipes.
  • Maintain the highest standards of cleanliness, sanitation, and safety in the kitchen and storage areas.
  • Plan meals and assist the Food & Beverage Manager with various assignments, including pricing and menu development.
  • Expedite peak meal periods by maintaining a 'hands-on' approach.
  • Conduct monthly department meetings with kitchen staff and provide training on a rotational basis.
  • Develop and implement systems to control waste and maintain a clean kitchen environment.
  • Review and analyze food sales, menu abstracts, and daily food cost reports to optimize menu offerings and pricing.
  • Operate and make changes in the P.O.S. system as needed.
  • Assist the General Manager and Engineering Department in implementing and maintaining emergency procedures.
Requirements:
  • At least 5 years of progressive experience in a hotel or related field, or a 4-year college degree and at least 1 to 2 years of related experience.
  • Supervisory experience required.
  • Must be proficient in Windows operating systems, Company-approved spreadsheets, and word processing.
  • Must be able to convey information and ideas clearly, evaluate and select among alternative courses of action quickly and accurately, and work well in stressful high-pressure situations.
Working Conditions:

The Executive Chef will work in a fast-paced kitchen environment, with frequent exposure to heat, noise, and physical demands. The ideal candidate will be able to maintain a clean and organized workspace, prioritize tasks effectively, and work collaboratively with the culinary team to achieve exceptional results.
