The Pastry Chef will collaborate closely with the Head Baker and Bakery Sous Chef to oversee all aspects of our bakery operations. This role requires a strong understanding of production timelines, product requirements, flavor profiles, and the quality expectations for our baked goods.
KEY RESPONSIBILITIES
- Exhibit exceptional knife skills and a thorough understanding of baking and pastry techniques, along with safe operation of kitchen equipment.
- Assist in establishing and maintaining a safe and efficient work environment.
- Organize and regularly update all recipes and standards for product preparation.
- Effectively manage projects assigned by leadership.
- Ensure compliance with health regulations and maintain cleanliness in the workspace.
- Conduct daily assessments of stations and products to uphold quality standards.
- Monitor and enhance the consistency of our baked goods.
- Follow management's guidance with efficiency and professionalism.
- Communicate production timelines clearly to the team.
- Prepare and scale dry goods for daily production needs.
- Facilitate timely delivery of baked goods to various locations.
- Coordinate with kitchen staff regarding bakery orders and adjustments.
- Organize the storage and delivery of products efficiently.
- Ensure all baked items are delivered at the appropriate temperature.
- Wrap, label, and rotate products as needed.
- Other responsibilities as assigned.
Required
- At least 3 years of experience in a bakery, preferably in a fine-dining or high-end establishment.
- Associate's Degree in Culinary Arts.
- Servsafe certification within six months of employment.
- Strong foundational knowledge in baking and pastry techniques.
- Ability to assess and adjust food items to meet menu specifications.
- Experience in training and mentoring staff.
- Positive attitude and approachability for team members.
- Desire to continuously improve bakery operations.
- Strong organizational skills and ability to meet deadlines.
- Expertise in ingredient identification and usage.
- Minimum of 5 years of professional baking experience, preferably in a Michelin-rated environment.
- Leadership experience in a fine dining bakery.
- Strong background in international baking techniques.
- Servsafe manager certification.
- Excellent communication and record-keeping abilities.
- Proficiency in mixing, folding, dividing, and shaping dough.
- Willingness to teach and share knowledge with staff.
- Ability to quickly resolve issues that arise during shifts.
- Proactive in identifying and addressing problems or opportunities.
- Ability to develop specific goals and plans to accomplish tasks.
- Strict adherence to recipes and production standards.
- A growing understanding of our culinary vision and philosophy.
- Ability to lift up to 50 lbs.
- Capacity to stand for extended periods (8-10 hours).
- Exposure to hot surfaces, sharp tools, and varying temperatures.
- Understanding that the role may require additional hours beyond a standard workweek.
