About the Role

We are seeking an experienced and skilled Executive Sous Chef to join our culinary team at Olde Mecklenburg Brewery LLC. As a key member of our leadership team, you will be responsible for providing guidance and direction to our culinary staff, ensuring that all recipes, food preparation, plating, and presentation meet our high standards of quality.

Key Responsibilities
  • Provide professional leadership and direction to the culinary personnel, fostering a positive and productive work environment.
  • Ensure that all food preparation, plating, and presentation meet our specifications and quality standards, adhering to our commitment to excellence.
  • Coach, counsel, and assist in conducting performance evaluations and reviews for staff, promoting growth and development.
  • Recommend or conduct disciplinary action, including termination or culinary staff when necessary, in accordance with company policies and procedures.
  • Maintain a safe, orderly, and sanitized kitchen environment, adhering to all health and safety regulations.
  • Operate as an expeditor during peak times, ensuring seamless service and efficient food delivery.
  • Collaborate with the Executive Chef and Executive Sous Chef to prepare and communicate daily line-ups to all BrauHaus staff, promoting effective communication and teamwork.
  • Attend and participate in all scheduled meetings and training sessions, staying up-to-date on industry trends and best practices.
  • Participate in the training programs and hiring process for culinary team members, contributing to the development of our team.
  • Partner with Service team to manage opening and closing procedures, ensuring a smooth and efficient service experience.
  • Ensure that all stations are stocked, labeled, temped, and quality controlled, maintaining a high level of quality and attention to detail.
  • Manage daily staffing levels throughout shifts, ensuring adequate coverage and minimizing labor costs.
  • Perform additional responsibilities as requested by the Executive Chef, demonstrating flexibility and a willingness to adapt to changing circumstances.
  • Know, understand, and follow all company emergency and safety procedures, prioritizing the safety and well-being of our team and guests.

Requirements
  • Culinary degree or 3 years of culinary training at a high-volume food establishment
  • Serve Safe certified, or willing to certify within 1 year
  • Computer skills to include Microsoft word, excel, and culinary reporting software
  • Flexibility to work weekends and holidays
  • Ability to lift up to 50 pounds
  • Interest in craft beer
  • Positive attitude and ability to build good working relationships
  • Excellent written and oral communication skills
  • Good listening skills
  • Strong leadership skills and ability to manage a variety of employees with varied backgrounds
  • Excellent volume cooking skills, presentation skills, and organizational skills
