Role Objectives

Manage the daily operations of the All Day and Fine Dining Restaurants, as well as In-Room Dining services. Ensure efficient functioning of these departments while meeting guests' expectations for product quality and service excellence. Collaborate with the Restaurant General Manager on long-term strategic planning for each unit.

Reporting Structure

The Food & Beverage Manager will report directly to the Director of Food & Beverage and will oversee the daily activities of restaurant staff and room service personnel.

Key Responsibilities

  • Support the Restaurant General Manager in the launch of the All Day and Fine Dining Restaurants and In-Room Dining; assist in developing departmental Standard Operating Procedures (SOPs).
  • Provide guidance and support to the line staff across restaurant and In-Room Dining operations.
  • Participate in pre-conference meetings as required.
  • Facilitate daily departmental meetings and lead staff briefings as necessary.
  • Ensure timely and accurate communication of group information and changes to relevant hotel associates.
  • Maintain a comprehensive guest history system to track food and beverage preferences.
  • Conduct audits of checks as needed; assist with corrections in the MICROS system; generate shift reports and support staff with closing procedures.
  • Assist in the training and onboarding process for new team members.
  • Maintain a visible presence on the dining floor, engaging with guests, addressing concerns, resolving issues, and ensuring a unique dining experience.
  • Additional responsibilities may include but are not limited to:
  • Assisting with monthly and weekly forecasts.
  • Monitoring departmental payroll.
  • Attending daily communication meetings.
  • Participating in weekly department head meetings.
  • Engaging in scheduled food and beverage meetings.
  • Contributing to menu development and updates as needed.
  • Revising departmental standards and procedures as necessary.

Qualifications and Skills

  • A minimum of 3 years of supervisory or managerial experience in a luxury hotel food and beverage environment or upscale dining establishment.
  • Willingness to work a flexible schedule, including early mornings, late nights, weekends, and holidays.
  • Proficiency in MS Office Suite, including Excel, PowerPoint, Word, as well as MICROS and Opera systems.
  • Exceptional organizational skills and strong multitasking capabilities.
  • Excellent communication skills with fluency in English; bilingual candidates are preferred.
  • A Bachelor's Degree in Hospitality or a related field is preferred.
  • Ability to meet the physical demands of the role, including prolonged walking/standing and lifting/carrying up to 25 lbs.
