Job Title: Executive Pastry Sous Chef - Culinary Operations Manager

Job Summary:

We are seeking an experienced and skilled Executive Pastry Sous Chef to join our culinary team at Holland America Group. As a key member of our operations team, you will be responsible for managing the pastry department, ensuring the highest standards of culinary excellence, and driving business growth.

Key Responsibilities:

  • Assist the Executive Chef: Collaborate with the Executive Chef to develop and implement culinary strategies, menus, and recipes that meet the highest standards of quality and presentation.
  • Manage Pastry Operations: Oversee the daily operations of the pastry department, including inventory management, staff supervision, and quality control.
  • Train and Develop Staff: Provide training and development opportunities for pastry staff to enhance their skills and knowledge, ensuring they meet the highest standards of culinary excellence.
  • Implement Food Safety and Sanitation: Ensure that all food safety and sanitation protocols are followed, and that the pastry department meets the highest standards of hygiene and cleanliness.
  • Control Inventory and Maintenance: Manage inventory levels, maintain equipment, and ensure that all necessary supplies are available to support pastry operations.
  • Monitor and Control Costs: Analyze and control costs associated with pastry operations, including inventory, labor, and equipment maintenance.
  • Develop and Implement Yield and Portion Control: Work with the Executive Chef to develop and implement yield and portion control strategies to minimize waste and optimize profitability.
  • Ensure Guest Satisfaction: Collaborate with the Executive Chef to ensure that all pastry products meet the highest standards of quality, presentation, and taste, and that guests are satisfied with their dining experience.

Requirements:

  • Education: Formal degree in food management from a recognized international culinary institution.
  • Experience: 5+ years of experience in a 5-star hotel, cruise ship, or high-profile restaurant, with a minimum of 2 years in a similar position.
  • Certifications: Certification from an accredited advanced food safety program, and extensive knowledge of VSP preferred.

Working Conditions:

Working on a cruise ship is a unique and challenging experience. You will be required to work long hours, be flexible with your schedule, and adhere to strict rules and regulations. You will be part of a close-knit team, and respect among all crew members is essential.

Travel Requirements:

  • Passport: Valid for a minimum of 6 months.
  • Seaman Book: Flag state issued.
  • Marine Fitness Medical: Flag state or flag state approved.
  • English Marlin Test: Minimum score of 80%.
  • Pre-employment Medical Examination: Required.
