Position: Assistant Kitchen Manager

Overview:

As an Assistant Kitchen Manager at ClubCorp, you will play a vital role in supporting the Executive Chef across various culinary operations. Your responsibilities will encompass ordering, scheduling, sanitation, maintenance, employee development, and performance evaluations.

Key Responsibilities:

  • Assist in the overall management of the main, grill, and banquet kitchens.
  • Ensure the quality and excellence of food preparation while maintaining profit and labor costs.
  • Coordinate and assist in the service of all dining activities, including a la carte, employee meals, and private events.
  • Maintain consistent preparation and presentation standards, adhering to ClubCorp quality guidelines.
  • Train, supervise, and manage kitchen staff to enhance team knowledge and spirit.
  • Participate in food and banquet meetings, as well as daily line-ups.
  • Prepare work schedules for kitchen personnel and monitor payroll expenses.
  • Manage the ordering, receiving, and proper rotation of food and kitchen supplies.
  • Contribute to menu development for both a la carte and banquet offerings, including special requests.
  • Oversee food expediting during meal periods, ensuring quality and presentation.
  • Maintain cleanliness and sanitation of the kitchen and individual work areas, including equipment and tools.
  • Assist team members and guests, ensuring exceptional service delivery.
  • Address member and guest complaints promptly and effectively.
  • Be adaptable to the fluctuating demands of the kitchen environment, assisting colleagues as needed.
  • Adhere to all company policies, procedures, and standards of operation.
  • Demonstrate the ability to multi-task and work efficiently in a fast-paced setting.
  • Maintain a clean and professional appearance in accordance with ClubCorp uniform standards.

Qualifications:

  • 2-3 years of experience as a line cook.
  • Culinary training is preferred.
  • Health Sanitation Card is required.
  • Strong communication skills and ability to follow instructions.
  • Ability to thrive in a fast-paced indoor environment.
