Assistant Culinary Manager
Overview
The Inn at Virginia Tech and Skelton Conference Center is seeking a skilled Assistant Culinary Manager to enhance our culinary team. This role is pivotal in the planning, oversight, and execution of all culinary operations.
Key Responsibilities
- Maintain an active role in all culinary operations.
- Collaborate with the food and beverage team in menu design, development, and execution.
- Ensure culinary staff are well-trained and capable of meeting departmental standards.
- Assist in calculating accurate food costs and liaise with accounting.
- Provide guidance to cooking staff on culinary techniques.
- Prepare and present dishes during peak times and special events.
- Evaluate and taste all food items to ensure quality.
- Estimate daily and weekly production needs and communicate these to kitchen staff.
- Manage food and beverage deliveries, ensuring quality and quantity.
- Work with culinary staff to exceed standards in portion sizes, presentation, and preparation.
- Ensure compliance with health and safety regulations in food preparation and service.
- Maintain records required by regulatory agencies regarding sanitation and food safety.
- Establish performance standards for staff and customer service.
- Analyze operational procedures to identify areas for improvement.
- Organize training programs for staff and address personnel issues.
- Monitor sales data to identify trends in food items.
- Coordinate maintenance and repairs of kitchen equipment.
- Train staff in food preparation and safety protocols.
- Collaborate with various departments for event planning and execution.
Qualifications
A Bachelor’s degree in a relevant field from an accredited institution or culinary school, along with a minimum of two years of related experience; or a high school diploma with at least five years of relevant experience; or a combination of education and experience that provides the necessary skills and knowledge.
Proficiency in computer skills is required, with familiarity in Microsoft Office preferred. Experience with hotel management systems is essential.
Comprehensive knowledge of culinary operations within a hotel setting, including relevant laws and regulations.
