Position Overview:

As a Culinary Supervisor, you will play a crucial role in ensuring that all dishes prepared in the kitchen meet high standards of quality, consistency, presentation, flavor, and cost efficiency.

This position involves training kitchen staff, adhering to corporate quality benchmarks, and helping to establish and enforce food specifications, portion sizes, recipes, and sanitation protocols.

The Culinary Supervisor is also tasked with managing food and labor expenses while enhancing guest satisfaction.


Key Responsibilities include, but are not limited to:

  • Engaging with guests and team members in a friendly, service-oriented manner while maintaining a positive attitude.
  • Fostering a supportive work atmosphere by addressing and resolving conflicts calmly and professionally.
  • Possessing comprehensive knowledge of menus and preparation methods in accordance with hotel standards.
  • Overseeing daily kitchen operations and food production areas.
  • Calculating daily food costs and monitoring all aspects of loss prevention in kitchen operations.
  • Collaborating with the Director of Food & Beverage to develop and implement menus.
  • Evaluating food portion sizes, visual presentation, taste, and serving temperatures.
  • Ensuring proper food storage and sanitation at the end of each shift.
  • Reviewing food purchases for appropriate ordering, quality, and pricing.
  • Managing daily tasks such as food items, sanitation, inventory, and food cost reporting.
  • Instructing culinary staff on daily forecasts and customer counts for adequate preparation.
  • Demonstrating proficiency in various cooking techniques, including charbroiling, frying, sautéing, braising, and roasting.
  • Recognizing quality standards in fresh produce, seafood, dairy, and meat products.
  • Following recipes accurately, including measuring and mixing ingredients to ensure freshness.
  • Preparing, grilling, steaming, and boiling various foods.
  • Presenting, garnishing, and arranging final dishes attractively.
  • Maintaining a clean, healthy, and safe work environment while adhering to sanitary practices.
  • Addressing guest complaints and resolving issues to the best of your ability.
  • Performing additional duties as assigned by management.
Qualifications

  • High school diploma or equivalent required.
  • Minimum of 3 years of culinary experience, preferably in the hospitality sector.
  • Ability to interpret various instructions in written, oral, or scheduled formats.
  • Effective communication skills in English, both written and verbal, to interact with guests and team members.
  • Familiarity with reservation and POS systems.
  • Proficient in computer usage and operating software.
  • Strong multitasking abilities and attention to detail.
  • Team-oriented mindset.
