Job Summary

We are seeking a highly skilled Pastry Chef de Partie to join our team at Hav + Mar, part of the Marcus Samuelsson Group. As a key member of our kitchen team, you will be responsible for preparing and executing mise en place, supporting other areas of the kitchen, and maintaining high standards of cleanliness and organization.

Key Responsibilities
  • Mise en Place: Prepare and execute mise en place fully for your work station, ensuring that all ingredients and components are ready for service.
  • Team Support: Support other areas of the kitchen as needed, and be able and willing to assist teammates in the kitchen as needed.
  • Station Management: Run your station through service, executing ingredients and components to high standards in an organized manner.
  • Communication: Communicate efficiently and effectively with your team and chefs to ensure smooth and efficient kitchen operations.
  • Cleanliness: Maintain the cleanliness of the kitchen in line with NYC DOH standards and our own exceptional standards.
  • Station Development: Learn and develop maximum proficiency across the various stations as assigned by chefs, including preparing and cleaning stations properly, preparing station for following shift, stocking stations adequately for service, labeling, consolidating, and communicating actively with chefs and teammates.
  • Professional Appearance: Maintain a professional appearance standard.

Requirements
  • Cooking Techniques: Strong knowledge of cooking techniques, food preparation, and knife handling.
  • Collaboration: Working collaboratively with BOH staff and FOH staff.
  • Fast-Paced Environment: Comfortable working in a fast-paced and high-energy environment.
  • Passion for Food: A passion for food, exceptional work ethic, and dedication.
  • Continuous Improvement: Able to take constructive criticism, learn quickly, and constantly improve.
  • Physical Demands: Ability to work/stand for 8-10 hours a day and to carry up to 20lbs occasionally.
  • Availability: Ability to work nights and holidays as required.
  • Positive Attitude: Positive attitude in the workplace, with a willingness to follow directions.
  • Workplace Cleanliness: Ability to work and keep your workspace clean and uphold the standards of the restaurant.
