Sodexo is looking for a Culinary Operations Manager to oversee culinary activities within a large-scale unit.
The Culinary Operations Manager will be responsible for menu development, program implementation, and team leadership & training.
This role involves direct collaboration with both internal and external stakeholders to manage the catering process from inception to delivery.Key Responsibilities:
• Directly supervise retail and catering chefs, along with the purchasing and catering manager;
• Maintain schedules for chefs and managers; provide coverage as necessary; oversee annual evaluations and goal setting for culinary staff through Ingenium;
• Establish and standardize culinary systems and protocols for the unit, including catering, retail menus, limited-time offers, garnishing, production standards, inventory management, and safety compliance.
• Monitor and audit new menu implementations;
• Ensure Food and Physical Safety compliance and conduct annual training for all staff;
• Perform audits, develop action plans based on findings, and maintain updated audit documentation;
• Collaborate with vendors for procurement and oversee purchasing manager and financial audits;
• Drive sustainability initiatives under the guidance of the Director of Culinary Operations;
• Conduct annual culinary training for all kitchen staff;
• Support chefs in achieving ACF certification with guidance from the Director of Culinary Operations;
• Enhance and standardize catering and banquet services, tailoring menus to client specifications;
• Introduce innovative ideas in retail, catering, and dining services; and
• Foster strong relationships with clients in the educational sector.
