Job Summary

The Pastry Sous Chef is a key member of our kitchen team, responsible for ensuring quality and production for both Crown Shy and Saga. This role requires a high level of detail and expertise, as well as the ability to influence every cook in the kitchen with a positive demeanor.

Key Responsibilities
  • Coordinate with the Executive Pastry Chef to plan projects and manage staff.
  • Supervise pastry cooks during service and production, ensuring that HACCP protocols are followed.
  • Delegate daily tasks to line employees and ensure the quality of products and product sourcing.
  • Develop new recipes and menu items for Crown Shy and Saga.
  • Report any complaints or issues involving staff or guests to Human Resources.
  • Expo private events and ensure that pastry-related needs are met.
Leadership Responsibilities
  • Implement company policies and protocols, and maintain high standards in the kitchen.
  • Problem-solve and address any issues in a timely manner, ensuring that the kitchen runs smoothly.
  • Ensure that company policies and procedures are followed, and that staff are aware of their responsibilities.
  • Nurture positive working relationships with staff, and lead by example.
  • Self-manage timelines to achieve goals and daily tasks.
Staffing Responsibilities
  • Interview potential new hires in coordination with the Executive Pastry Chef.
  • Engage in the promotional decision-making process in coordination with the Executive Pastry Chef.
  • Issue disciplinary action when necessary, and engage in the decision-making process for terminations in coordination with the Executive Pastry Chef and HR.
  • Participate in annual staff reviews, and train staff on HACCP regulations and coordination of drills.
Administrative Responsibilities
  • Finalize and approve pastry cook time cards.
  • Manage product ordering and order guides.
  • Manage recipe binders and ensure that they are up-to-date.
