About the Role

We are seeking a highly skilled and experienced Executive Sous Chef to join our team at AEG. As a key member of our culinary operations team, you will be responsible for supporting the Executive Chef and Executive Sous Chef in the oversight of all production, operation, and sanitation aspects of culinary and stewarding operations throughout the facility.

Key Responsibilities
  • Lead the day-to-day operations of food outlet kitchens as assigned, focusing on people and product excellence.
  • Develop and implement high-level multiple outlet management strategies and tactics to drive business growth and profitability.
  • Source and procure the freshest fruits, vegetables, meats, fish, and other food products of the highest standard for menu preparation.
  • Ensure compliance with Health Department regulations through proper receiving, storage, and rotation of food products.
  • Collaborate with the Executive Chef and Executive Sous Chef to produce all food items necessary for operation.
  • Lead culinary staff in maintaining sanitation standards in all kitchens, adhering to local health department standards and company standards.
  • Provide exceptional customer service and quality products by maintaining positive customer and client relations through effective communication and prudent financial practices.
  • Work under the direction of the Executive Chef and Executive Sous Chef concerning banquets and special events.
Requirements
  • Bachelor's degree or certification from an accredited culinary arts institute, or apprenticeship certification from the American Culinary Federation.
  • Minimum three (3) years' experience in a high-volume full-service food operation.
  • Proven track record in improving kitchen efficiencies, quality, and relative costs.
  • Excellent leadership, financial analysis, team building, and communication skills/customer service.
  • Knowledge of kitchen sanitation, operation, and maintenance of kitchen equipment.
  • Detail-oriented and extremely organized with the ability to learn new programs and procedures quickly.
  • Proficient in Microsoft Word, Excel, and PowerPoint.
  • Flexible to work extended hours due to business requirements, including nights, weekends, and holidays.
  • Open to providing incidental or short-term support to other facilities in the event of a business emergency.
  • Travel may be required.
