POSITION SUMMARY

Responsible for the overall effectiveness of daily culinary operations. Demonstrates culinary expertise by executing tasks while guiding the team and overseeing all food-related activities. Focuses on enhancing guest and team member satisfaction while adhering to the budgetary constraints. Manages all kitchen sections to ensure a consistent, high-quality culinary output. Tasked with mentoring and developing kitchen staff, including direct reports. Must guarantee compliance with sanitation and food safety standards.

CANDIDATE PROFILE

Education and Experience

  • High school diploma or GED; 4 years of experience in culinary, food service, or a related professional field.
OR

  • 2-year degree from an accredited institution in Culinary Arts, Hospitality Management, or a related discipline; 2 years of experience in culinary, food service, or a related professional field.

KEY RESPONSIBILITIES

Upholding Culinary Standards and Responsibilities

  • Assists in the creation and development of new culinary applications, ideas, and systems, including artistic contributions.
  • Helps determine food presentation and creates visually appealing food displays.
  • Oversees kitchen shift operations and ensures adherence to all Food & Beverage policies, standards, and procedures.
  • Informs purchasing, receiving, and food storage protocols.
  • Ensures compliance with food handling and sanitation regulations.
  • Performs all duties of kitchen managers and team members as needed.
  • Estimates daily production requirements weekly and communicates needs to kitchen staff daily.
  • Assists the Executive Chef with all culinary operations.
  • Recognizes superior quality in products, presentations, and flavors.
  • Ensures compliance with all local, state, and federal regulations (e.g., OSHA, ASI, and Health Department).
  • Follows proper handling and temperature protocols for all food items.
  • Operates and maintains all kitchen equipment and reports any malfunctions.
  • Prepares and cooks a variety of foods, either regularly or for special events.
  • Checks the quality of raw and cooked food items to ensure standards are met.

  • Utilizes interpersonal and communication skills to lead, influence, and motivate others; advocates sound financial and business decision-making; demonstrates integrity; leads by example.
  • Encourages and fosters mutual trust, respect, and cooperation among team members.
  • Demonstrates appropriate professional behaviors.
  • Ensures team members understand expectations and objectives of kitchen operations.
  • Establishes and maintains open, collaborative relationships with team members.
  • Ensures fair and consistent administration of property policies.
  • Communicates performance expectations in line with job descriptions for each role.
  • Recognizes successful performance and achieves desired outcomes.
  • Leads shifts while personally preparing food items and fulfilling requests based on specifications.

Delivering Exceptional Customer Service

  • Provides services that exceed expectations for customer satisfaction and retention.
  • Sets a positive example for guest relations.
  • Empowers team members to deliver outstanding customer service.
  • Aims to enhance service performance.
  • Engages with guests to gather feedback on product quality and service levels.
  • Addresses guest issues and complaints effectively.

Achieving Culinary Objectives

  • Meets and surpasses goals including performance, budget, and team objectives.
  • Assists in the development of specific goals and plans to prioritize, organize, and accomplish work.
  • Utilizes the Labor Management System to effectively schedule according to business demands and track associate attendance.
  • Trains team members in safety protocols.

Additional Duties

  • Provides information to supervisors, colleagues, and subordinates through various communication methods.
  • Analyzes information and evaluates results to select the best solutions and resolve issues.
  • Participates in all relevant meetings (e.g., Daily Stand Up, BEO, Pre-Cons, Staff, Forecast, Department, and Intra-department).
The hourly pay range for this position is $24.04 to $29.81.
