Position Title: EXECUTIVE CHEF - JAPANESE CUISINE

Compensation: Competitive salary with bonus eligibility.

Role Summary:

As the Executive Chef specializing in Japanese cuisine, you will oversee all kitchen operations, ensuring a safe and sanitary environment for all staff members. Your role will involve preparing and directing the preparation of meals in line with corporate standards and guidelines. This position is ideal for a dynamic and innovative culinary professional.

Key Responsibilities:

  • Design and implement regular and modified menus adhering to established guidelines.
  • Utilize standardized recipes while maintaining portion control and presentation standards. Regularly complete production worksheets and waste logs.
  • Provide training to kitchen staff on food preparation, safe handling, and equipment operation, in compliance with company and regulatory standards.
  • Establish and uphold cleaning and maintenance schedules for kitchen equipment and work areas, ensuring compliance by kitchen staff.
  • Manage inventory of food and non-food supplies, ensuring availability while adhering to budgetary guidelines.
  • Make informed decisions regarding the use of leftover food products in accordance with company policies.
  • Ensure compliance with all federal, state, and local health regulations and sanitation procedures, as verified through audits.
  • Adhere to safety policies and procedures, including incident reporting.
  • Participate in departmental meetings and professional development programs as required.

Preferred Qualifications:

  • A.S. degree or equivalent experience.
  • Minimum of 5 years of progressive culinary and kitchen management experience with a focus on Japanese cuisine.
  • Extensive experience in catering is advantageous.
  • Experience in high-volume, complex food service operations is highly desirable.
  • Hands-on experience as a chef is essential.
  • In-depth knowledge of food and catering trends, emphasizing quality, production, sanitation, and cost control.
  • Proficiency in Microsoft Office applications, including Word, Excel, and PowerPoint.
  • Willingness to engage in client satisfaction initiatives.
  • ServSafe certification is highly preferred.
