POSITION SUMMARY: Assistant Kitchen Manager

Assist the Executive Chef and all management personnel in the pursuit of delivering exceptional service and high-quality products that meet the expectations of Houston Country Club members.

As a key figure in the kitchen, you will be viewed as a role model for your colleagues. Your team will depend on you to establish a positive atmosphere during shifts and to exemplify the standards expected in the kitchen. Responsibilities include preparing ingredients for cooking, which encompasses portioning, chopping, and proper food storage. You will also wash and peel fresh produce, weigh, measure, and mix ingredients, and prepare and cook dishes according to established recipes, quality benchmarks, presentation guidelines, and food preparation protocols. Additionally, you will prepare cold dishes and operate various cooking equipment such as ovens, stoves, grills, and fryers. Monitoring food quality during preparation and ensuring proper serving sizes and presentation are also critical components of your role.

As a supervisor, your contribution will be vital to the dining experience of our members. We take pride in maintaining high standards for food quality and cleanliness in the kitchen. Your efficiency, consistency, and speed are essential for the seamless operation of our kitchen and the satisfaction of our members. You will be accountable for ensuring high-quality products and the availability of necessary tools and equipment for your daily tasks. At the conclusion of your shift, you will check in with the Chef on duty to confirm that all stations are clean and organized, and review any event orders to ensure all items are prepared as needed.

KEY RESPONSIBILITIES:

  • Collaborate effectively with team members, recognizing that the kitchen operates as a cohesive unit.
  • Assist Chefs in overseeing all food service areas.
  • Communicate daily with Chefs regarding menu changes and business projections.
  • Participate in menu and banquet planning as required.
  • Adhere to the work schedule established with the Sous Chef.
  • Supervise food outlets and stations, ensuring all staff are present and knowledgeable about their duties.
  • Regularly check on team members to ensure tasks are performed correctly.
  • Inspect employee stations at the end of shifts to confirm compliance with closing procedures.
  • Monitor portion sizes and presentation of dishes.
  • Maintain a safe working environment by adhering to safety standards and managing inventory levels.
  • Assist Sous Chefs with ordering and inventory management.
  • Enforce proper food handling practices to minimize health risks and reduce waste.
  • Be prepared to perform any kitchen task as needed.
  • Communicate professionally with culinary team members to achieve objectives.
  • Plan and conduct quarterly training sessions for kitchen staff.
  • Act as the point of contact for temporary staffing needs.
  • Ensure kitchen staff have the necessary resources, including uniforms and tools.
  • Work efficiently, demonstrating a sense of urgency to inspire team members.
  • Possess the technical skills required to fulfill job responsibilities and maintain knowledge of the menu.
  • Ensure the next shift is informed of any outstanding orders.
  • Follow directions from supervisors and prepare items as assigned.
  • Attend mandatory kitchen meetings.
  • Utilize standardized recipes and production sheets to minimize waste.

EDUCATIONAL AND EXPERIENCE REQUIREMENTS:

  • Must be at least 18 years old.
  • Previous culinary experience is required, and candidates must pass a practical skills assessment.
  • References related to educational and work history must be available upon request.

WORKING HOURS:

  • Hours will vary based on the weekly schedule and club events.

WORKING CONDITIONS:

  • Work environment may include exposure to hot, cold, wet, and humid conditions.

DRESS CODE:

  • Clean, pressed white chef coat uniforms are required.
  • Chef hat and apron must be worn at all times in the kitchen.
  • Side towels and aprons should be removed during breaks outside the kitchen.
  • Black kitchen pants or black and white checkered pants are mandatory; baggy styles are not permitted.
  • Footwear must be full-foot leather, closed-back, non-slip, and oil-resistant.
  • Black socks must be worn at all times.

PERSONAL HYGIENE AND APPEARANCE STANDARDS:

  1. Hair must be clean, natural in color, and well-groomed.
  2. Make-up should be minimal and enhance natural features.
  3. Use of strong scents is discouraged.
  4. Fingernails must be clean and trimmed; nail polish is not allowed.
  5. Only stud earrings are permitted; other jewelry is not allowed.
  6. Any cuts or abrasions must be covered.
  7. Food-safe gloves should be used when necessary.

PHYSICAL REQUIREMENTS:

Employees must be able to perform essential functions, which may include:

  • Standing, walking, climbing stairs, and other physical activities for up to 10 hours.
  • Using hands to handle tools and equipment.
  • Communicating effectively with members and colleagues.
  • Reading and interpreting visual information.
  • Lifting up to 40 lbs.
  • Being mobile throughout the kitchen and clubhouse.
