Position Summary

The Sous Chef role is pivotal within our culinary team, responsible for guiding and mentoring team members to ensure outstanding food quality and guest satisfaction. The ideal candidate will possess a strong culinary background and a commitment to excellence in food service.

Key Responsibilities

  • Collaborate with the Executive Chef and fellow Sous Chefs to lead a diverse culinary team.
  • Maintain recipe and nutritional standards.
  • Adapt to daily menu variations.
  • Provide leadership, training, and support during kitchen operations.
  • Act as the primary contact for best practices during service periods.
  • Work closely with lead cooks to ensure efficient shift operations.
  • Contribute to menu and recipe development on a weekly basis.
  • Assist in sourcing and ordering ingredients.
  • Be prepared to support any kitchen station as required.
  • Assume additional leadership responsibilities in the absence of the Executive Chef.
  • Perform other assigned duties as necessary.
  • Demonstrate flexibility in a dynamic work environment, often requiring a 7-day work week during peak seasons.

Detailed Responsibilities

  • Identify and implement operational improvements.
  • Achieve financial targets and adhere to budgetary constraints.
  • Oversee equipment maintenance protocols.
  • Monitor inventory levels and communicate needs effectively.
  • Ensure compliance with kitchen management procedures, including checklists and cleaning schedules.
  • Develop menu specifications as needed.
  • Set standards for chef table presentations.
  • Conduct daily quality checks to uphold flavor standards.
  • Lead culinary operations on game days.
  • Manage end-of-month inventory with the purchasing team.
  • Proactively address food waste management.
  • Oversee employee break schedules to ensure team well-being.
  • Address performance issues with team members as necessary.
  • Facilitate onboarding and orientation for new culinary staff.
  • Ensure all aspects of food ordering, preparation, and service meet high standards of sanitation and safety.
  • Manage the culinary department budget effectively.

Qualifications and Skills

  • Minimum of 2 years in a culinary leadership role.
  • Culinary degree preferred.
  • Proficient in computer applications.
  • Understanding of financial principles.
  • Passion for hospitality and culinary arts.
  • Strong interpersonal and stakeholder management abilities.
