Position Summary

The Assistant Culinary Leader plays a pivotal role within our culinary team, guiding and mentoring staff to ensure exceptional food quality and guest satisfaction. The ideal candidate is a seasoned culinary professional with a genuine passion for food and hospitality.

Key Responsibilities

  • Collaborate with the Executive Chef and fellow culinary leaders to manage a diverse team.

  • Provide leadership, training, and mentorship to kitchen staff during daily operations.
  • Serve as the primary contact for best practices during service periods.
  • Work closely with lead cooks to ensure smooth and efficient shift operations.
  • Assist in the creation and development of weekly menus and recipes.
  • Support the procurement and sourcing of high-quality ingredients.
  • Be ready to assist any team member or station as needed, including the preparation of menu items.
  • Take on additional leadership responsibilities in the absence of the Executive Chef.
  • Perform other assigned duties as necessary.
  • Exhibit flexibility in a dynamic environment where service times and schedules may change frequently.

Detailed Responsibilities

  • Identify opportunities for operational improvements.
  • Achieve financial targets and adhere to budgetary guidelines.
  • Oversee routine equipment maintenance.
  • Monitor and communicate inventory levels.
  • Ensure compliance with kitchen management procedures, including checklists and cleaning schedules.
  • Develop menu specifications as required.
  • Establish standards for chef table presentations.
  • Conduct daily quality checks to ensure flavor and presentation standards are met.
  • Lead culinary operations on event days.
  • Manage end-of-month inventory in collaboration with the purchasing team.
  • Proactively manage food waste to optimize food costs.
  • Supervise employee breaks to support team well-being.
  • Address performance issues with team members as necessary.
  • Facilitate onboarding and orientation for new culinary staff.
  • Ensure high standards in food ordering, delivery, preparation, and service in accordance with sanitation and safety protocols.
  • Manage the culinary department budget effectively.

Qualifications

  • Minimum of 2 years of experience in a culinary leadership role.
  • A culinary degree is preferred.
  • Proficient in computer applications.
  • Understanding of financial principles.
  • Passion for food, hospitality, and retail.
  • Strong interpersonal and stakeholder management skills.
