Position Summary

The Sous Chef plays a pivotal role in our culinary operations, guiding and mentoring team members to ensure outstanding food quality and guest satisfaction. The ideal candidate will possess extensive culinary experience and a strong commitment to delivering exceptional dining experiences.

Key Responsibilities

  • Collaborate with the Executive Chef and fellow Sous Chefs to lead a diverse culinary team.
  • Maintain adherence to recipe and nutritional standards.
  • Adapt to daily menu modifications with ease.
  • Provide leadership, training, and mentorship to kitchen staff.
  • Serve as the primary contact for best practices during service periods.
  • Work closely with lead cooks to ensure smooth and efficient operations during shifts.
  • Assist in the creation of weekly menus and recipes.
  • Support the procurement and sourcing of ingredients.
  • Be willing to assist at any station as required, including daily food preparation.
  • Take on additional leadership responsibilities in the absence of the Executive Chef.
  • Perform other assigned duties as necessary.
  • Demonstrate flexibility, as the work environment and schedules may change based on team and coaching needs.

Detailed Responsibilities

  • Identify and implement improvements in operational efficiency.
  • Achieve financial targets and manage budgets effectively.
  • Oversee routine maintenance of kitchen equipment.
  • Monitor and communicate inventory levels.
  • Ensure compliance with kitchen management protocols, including checklists and cleaning schedules.
  • Develop menu specifications as required.
  • Establish standards for chef table presentations.
  • Conduct daily quality checks to ensure flavor and presentation standards are met.
  • Lead culinary operations on game days.
  • Manage monthly inventory in collaboration with the purchasing team.
  • Proactively minimize food waste to control costs.
  • Oversee employee breaks to ensure team well-being.
  • Address performance issues with team members as needed.
  • Facilitate onboarding and orientation for new culinary staff.
  • Ensure all aspects of food ordering, preparation, and service meet high standards of sanitation and safety.
  • Manage the culinary department budget effectively.

Qualifications and Skills

  • Minimum of 2 years of experience in a culinary leadership role.
  • A culinary degree is preferred.
  • Strong computer skills.
  • Understanding of financial principles.
  • Passion for hospitality and culinary arts.
  • Excellent interpersonal and stakeholder management abilities.
