Restaurant Sous Chef Job Description

Job Summary:

The Restaurant Sous Chef is a key member of our culinary team, responsible for ensuring the highest standards of food quality, presentation, and service. As a seasoned professional, you will oversee the day-to-day operations of the kitchen, supervise a team of cooks, and maintain a clean and safe working environment.

Key Responsibilities:

  • Supervise kitchen staff to ensure optimal efficiency, productivity, and quality standards
  • Assume all duties of the Chef de Cuisine in their absence
  • Train, support, and discipline kitchen employees to maintain high levels of morale and productivity
  • Coordinate service, pass, and pick-up of food
  • Inspect the cleanliness of the line floor and kitchen stations
  • Oversee the proper and efficient preparation of food for the restaurant, ensuring quality and quantity standards are met
  • Taste and monitor presentation of all food served to guests, ensuring appearance and quality are consistently maintained

Requirements:

  • English fluency required; Spanish fluency helpful
  • Culinary graduate with knowledge of all facets of kitchen operations and production
  • Minimum three years prior hotel/kitchen experience, including a minimum of two years of supervisory experience
  • Familiar with OSHA, local Department of Health regulations, relevant current laws governing handling of hazardous substances, and COVID protocols
  • Valid San Diego Food Handlers card required upon hire; valid California driver's license required

Working Environment:

The Restaurant Sous Chef will work in a fast-paced kitchen environment, with frequent short trips to the refrigerator, freezer, and storeroom. The kitchen may be moist, warm, and odorous from cooking foods, and the floor may be slippery from moisture and grease. The incumbent will be expected to work weekdays, weekends, and holidays, and will be required to maintain a high level of morale and productivity among kitchen staff.
