Job Overview

The Culinary Operations Supervisor collaborates closely with the Executive Chef to ensure the successful execution of all operational tasks. Responsibilities encompass overseeing the production management software, ensuring recipe adherence, managing procurement, maintaining HACCP standards, and overseeing inventory control. This role also involves directing the activities and training of kitchen staff to guarantee a high-quality, efficient, and profitable food service operation while upholding sanitation standards and proper food handling practices.

COMPENSATION: The salary for this position ranges from $75,000 to $78,000, influenced by factors such as the applicant's skills, qualifications, relevant degrees and certifications, previous experience, market data, and other pertinent elements. Additional compensation may include bonuses or commissions where applicable. This reflects Aramark's good faith estimate of the compensation range at the time of posting.

If hired, the employee will be in an "at-will position," and Aramark reserves the right to adjust base salary and other discretionary payments or compensation programs at any time and for any reason, including individual performance, departmental performance, and market conditions.

Key Responsibilities

+ Foster a friendly, efficient, and positive customer service environment for clients, customers, and coworkers, responding proactively to their needs.

+ Establish and uphold sanitation standards for the kitchen, cafeteria, and related areas.

+ Implement and enforce company policies and procedures regarding food and supply procurement to achieve optimal quality and budgetary goals.

+ Develop and innovate recipes, reviewing menus and analyzing recipes to determine food, labor, and overhead costs, while assigning prices to menu items.

+ Oversee food production software to ensure compliance with recipes and production documentation.

+ Monitor food preparation methods, portion sizes, and garnishing to ensure adherence to prescribed standards and cost control measures.

+ Maintain established safety systems and training programs to ensure a secure working environment, complying with all OSHA regulations and other applicable laws.

+ Recognize and implement appropriate food production services tailored to the department's specific needs, demonstrating expertise in relevant issues.

+ Collaborate with the Executive Chef to assess production needs and schedule accordingly.

+ Direct the work of supervisors and maintain compliance with Aramark's operational standards.

+ Ensure adherence to all federal, state, and local regulations, including the Civil Rights Act, Age Discrimination in Employment Act, and Americans with Disabilities Act.

+ Participate in menu planning and the utilization of food surpluses, considering guest numbers, market trends, and dish popularity.

+ Assist in the recruitment and onboarding of production staff, familiarizing new hires with kitchen practices.

Qualifications

+ Associate's degree with 3-4 years of supervisory experience or 6-8 years of supervisory experience in a related field.

+ 2-3 years of experience in a similar role.

+ 2-3 years of post-secondary education or equivalent experience.

+ Proficient in computer systems and production software.

+ Culinary degree preferred.

+ Advanced knowledge of food service principles and practices.

+ Experience in managing personnel and resolving issues.

+ Strong verbal and written communication skills for effective interaction with clients and support staff.

+ Ability to produce written documents that adhere to proper grammar and style.

+ Proficient in mathematical concepts relevant to food service operations.

+ Strong management, leadership, planning, and organizational skills, with the ability to handle confidential information.
