About Pat's Pastured:
Established in 2002, Pat's Pastured is dedicated to delivering premium pasture-raised and grass-fed meats.

Our mission is to ensure our livestock thrive in an environment that allows them to exhibit their natural behaviors within expansive pastures.

This means our pigs can root, run, and play; our chickens can peck, scratch, and crow; our turkeys can gobble and strut; and our cows graze on grass outdoors, rather than being confined and fed corn.

Farm Overview: Over 100 acres of pastures and woodlands distributed across various plots in Rhode Island. All land is managed using an intensive rotational grazing system with diverse livestock species. The primary farm is situated in East Greenwich, Rhode Island.

All meat and eggs are marketed through farmers' markets (4 in summer, 2 in winter), home delivery, shipping, Meat/Poultry CSAs, wholesale and restaurant sales, and direct on-farm sales.


Processing Facility Overview:

Our USDA-inspected meat processing facility is located on-site in a 45' x 30' building, featuring multiple outdoor walk-in freezer spaces.

The facility is equipped with modern poultry processing machinery (plucker & scalder) and a conveyor-style poultry parting line.

Meat cutting areas are outfitted with a roll-stock machine, dual chamber vacuum sealer, vacuum sausage stuffer, and a high-capacity meat grinder.

Additionally, there is a RI Department of Health Inspected commercial kitchen offsite, equipped with a commercial smoker, ovens, and a 40-gallon steam kettle. Value-added products are crafted at this location by our part-time chef. Pat's Pastured is subject to USDA inspections for processing beef, pork, lamb, and poultry on the farm.

Position Overview:
Our farm seeks enthusiastic and dynamic individuals who are passionate about agriculture and food. The Meat Processing Supervisor is a full-time, hands-on management role responsible for producing high-quality poultry, beef, and pork cuts, as well as sausages.

Key Responsibilities:
- Overseeing a team of 6-12 staff members while operating in our USDA-inspected processing facility, processing 600-800 chickens weekly (May-November) and 600 turkeys in October.

- Cutting and fabricating pastured pigs (150+ annually) into retail cuts, along with smoking and sausage production.

- Cutting and fabricating beef – 6 per month.

- Maintaining detailed logs for USDA inspections.

- Communicating with USDA site inspectors and addressing meat processing-related issues.

- Adhering to HACCP plans and SSOP for USDA compliance.

- Continuously developing and managing inventory systems for on-farm products and USDA-processed meats.

- Assisting with the maintenance and servicing of meat processing equipment.

- Collaborating with the Livestock Manager and Farm Manager/Owner.

- Implementing lean manufacturing techniques across all processing operations.

- Developing prepared food products in our licensed offsite commercial kitchen, including various sausage types, broth, soup, and meat pies.

- Documenting and controlling processing and food costs.

- Working closely with the farm accountant and office manager.

- Utilizing produce from our on-farm garden for product development.

- Performing other tasks as required.

Qualifications and Requirements:
- Minimum of 3 years of experience in butchery, meat cutting, or a commercial kitchen environment.

- Proficient knife skills.

- Ability to maintain food processing equipment.

- A strong passion for farming and farm-to-table culinary practices.

- Experience in staff management.

- Knowledge of culinary and agricultural practices.

- Valid driver's license with a clean driving record.

- Interest in further developing a prepared food product line utilizing farm products.

- HACCP & ServeSafe certification is a plus, or willingness to obtain.

- USDA experience is highly advantageous.

- Capability to regularly lift and move up to 50 lbs.

- Willingness to work in cold environments (refrigerator and freezer).

- Organized and capable of multitasking.

- A positive, proactive attitude.

- Flexibility, creativity, and a passion for problem-solving.

- Experience with preventative maintenance planning.

- Familiarity with Microsoft Office, Google Docs, and Quickbooks is a plus.

Compensation:
- Annual salary ranging from $65,000 to $70,000, depending on experience.

- Two weeks of paid vacation annually.
