Job Title: Head Baker - Viennoiserie Specialist

Maison Kayser is seeking a highly skilled and experienced Head Baker to oversee the Viennoiserie department and ensure the production of high-quality bread products.

Key Responsibilities:
  • Coordinate with management to ensure all Viennoiserie Bakers are trained on commissary rules and standards.
  • Supervise and assist with monthly inventory count and inspection at the commissary Viennoiserie department.
  • Work with the Commissary Manager, Bakery Executive team, and Drivers to coordinate a smooth flow for delivery of frozen Viennoiserie and dough to NYC stores.
  • Maintain a proactive response and resolution to any issues that may arise during delivery.
  • Ensure all teams are implementing product rotation based on product code dates for all deliveries.
  • Laminate and shape dough according to Maison Kayser's standards to produce Viennoiserie products such as croissants, pains au chocolat, brioches, and pain aux raisins.
  • Measure and mix ingredients to form dough, according to Maison Kayser's recipes.
  • Roll, cut, and shape dough by hand to form Viennoiserie-related products.
  • Place dough in the blast chiller for the correct amount of time according to Maison Kayser's recipe.
  • Follow the daily production sheet according to the recipes.
Requirements:
  • Minimum 3-5 years of experience in Viennoiserie bread and related bread production.
  • Experience working in a high-volume production environment is highly preferred.
  • Degree from a post-secondary culinary arts training program is highly preferred.
  • Experience with a mixer and dough sheeter.
  • Must have open availability to work Monday-Friday 7am to 3pm (Weekends Off).
  • Strong organizational skills along with the ability to recognize what needs to be prioritized and when.
Physical Requirements:
  • Must be able to work at least an 8-hour shift while standing or walking to perform essential functions.
  • Will be required to lift up to 50 lbs during the course of a workday.
  • Must be able to push or pull up to 150lbs in duration of shift.
  • Will require bending and stooping.
  • Will work with ovens in high temperatures and also within the cooler temperatures during shift.
  • Must be able to work in cold environment 55-65 Degrees Fahrenheit.
  • Must be able to communicate effectively with management and team members.
