Job Overview:
The Culinary Operations Supervisor is accountable for all facets of food preparation, ensuring adherence to sanitation standards, training staff, managing product organization, and overseeing operations in the absence of both the Kitchen Manager and Chef.
During shifts, the Culinary Operations Supervisor may fulfill the roles of Cook, Prep Cook, or Server as required.
Key Responsibilities:
- Assist patrons with their orders
- Oversee all food preparation tasks (including but not limited to):
- Grilling items for meal service
- Cooking chicken and other hot dishes
- Scratch baking (as determined by the establishment)
- Preparing all items for bento boxes
- Assembling sandwiches and salads
- Preparing various hot and cold food items
- Manage front-of-house operations, including assisting customers and processing transactions (where applicable)
- Enforce sanitation protocols and ensure proper product organization and rotation
- Train new Cooks, Prep Cooks, and Servers in operational procedures
- Handle administrative tasks such as inventory management and routine ordering
- Supervise back-of-house operations in the absence of both managers
- Ensure quality control and adherence to recipe standards
- Respond to department inquiries via phone
- Comprehend and comply with all company policies and procedures
Additional Duties:
- Transport grilled items
- Pack, rotate, and label all prepared foods
- Merchandise bakery items
- Slice prepared meats for service
- Manage setup and breakdown for service lines
- Restock utensils, bags, cups, napkins, beverages, and condiments
- Maintain cleanliness, including dishwashing, waste disposal, and sanitation of surfaces
- Replenish soaps, sanitizers, and related chemicals
- Announce kitchen specials to customers
- Conduct demonstrations for new menu items when necessary
- Perform any other tasks as assigned by management
Physical Requirements:
- Must be at least 18 years old (due to operation of heavy machinery)
- Ability to lift 40-50 lbs unassisted
- Capacity to stand for extended periods (4-10 hours)
- Ability to push and pull weights up to 100 lbs
Mental Requirements:
- Detail-oriented
- Highly organized
- Capable of working independently and collaboratively
- Proficient in multitasking
- Resourceful
Work Schedule:
- As outlined in the employee handbook
- May involve early mornings, evenings, weekends, and holidays
- Occasional extended shifts (up to 10 hours)
Work Environment:
- Fast-paced
Temperature Conditions:
- Cool to room temperature in serving areas
- Extreme temperatures in warehouse/kitchen (over 100°F); Chill (35°F)/Freezer (-10°F)
Potential Hazards:
- Working with hot pans, serving trays, grills, ovens, steamers, fryers, etc.
- Handling sanitation chemicals
- Using knives and slicing equipment
Qualifications:
Education/Experience:
- High school diploma or equivalent
- Minimum three years of external experience as a Cook or two years of internal experience
- One year of supervisory experience preferred
Communication Skills:
- Excellent customer service abilities
- Effective communication skills
- Good phone etiquette
- Proficient written and verbal communication in English
Other Skills:
- Ability to complete tasks accurately and efficiently
- Strong multitasking capabilities
- Highly organized with attention to detail
- Ability to prioritize tasks effectively
- Capable of meeting tight deadlines
- Quick to adapt and follow through on various projects
