Leadership and Team Development:

  • Effectively oversee time management within the culinary team, ensuring all members are aligned.
  • Collaborate with fellow leaders to share culinary expertise when necessary.
  • Provide comprehensive training to staff, covering essential skills such as best practices, knife techniques, and kitchen etiquette, while encouraging independence in task completion.
  • Utilize leadership abilities to enhance productivity and foster a positive work atmosphere, holding all team members accountable for their actions and adherence to procedures; implement systems for recognition and accountability.
  • Prioritize the physical and mental wellness of each team member, while encouraging their growth through constructive challenges.

Kitchen Maintenance and Organization:

  • Ensure that all staff are proficient in the operation, maintenance, cleaning, and inspection of kitchen equipment, including deep fryers, stoves, food processors, mixers, slicers, and wood-fired ovens.

Menu Innovation:

  • Keep the menu dynamic and appealing by staying updated on culinary trends, leading to regular updates and the introduction of daily or seasonal specials.
  • Uphold high standards for all dishes leaving the kitchen, with established accountability measures.
  • Maintain a blended food cost of 18%, with accurate reporting on each menu item.
  • Ensure all new menu items are costed prior to their introduction.

Operational Management:

  • Oversee the purchasing, receiving, and storage of products in accordance with company standards.
  • Develop the back-of-house schedule, aiming for a 20% weekly labor cost, in collaboration with the General Manager, utilizing management tools effectively.
  • Complete daily and weekly orders, as well as quarterly inventory assessments.
  • Supervise the execution of preparation lists and ensure adherence to opening and closing standards.
  • Ensure that recipes and all back-of-house instructional materials are created and maintained in both digital and printed formats for easy reference.
  • Emphasize the importance of quality, consistency, and speed in all kitchen operations.
