Job Summary:

The Executive Sous Chef is a key member of the culinary team, responsible for assisting the Executive Chef in the efficient operation of food production areas. This role requires a high level of expertise in food preparation, presentation, and safety, as well as strong leadership and communication skills.

Responsibilities:
  • Assist the Executive Chef in supervising and coordinating the preparation of all food items based on standardized recipes.
  • Ensure the cleanliness, sanitation, and safety of the kitchen work and storage areas.
  • Minimize waste and maximize cost/production ratio.
  • Supervise and train kitchen personnel to ensure they are fulfilling their job functions appropriately.
  • Create menus and food presentation that meet the hotel's standards.
  • Address and resolve customer complaints in a timely and effective manner.
  • Perform spot checks for menu accuracy and taste.
  • Monitor and control food costs, including inventory management and waste reduction.
  • Review and analyze sales data to identify trends and opportunities for improvement.
  • Develop and implement strategies to increase revenue and improve customer satisfaction.
  • Collaborate with the Executive Chef to achieve departmental objectives and goals.
  • Expedite peak meal periods by maintaining a 'hands-on' approach.
  • Work within the monthly set food cost budget and adjust food requisitions as needed.
  • Monitor and maintain all kitchen inventories, including par levels and stock rotation.
  • Prepare annual reviews of employees and provide feedback and coaching to improve performance.
  • Perform other duties as assigned by the General Manager.
Requirements:
  • At least 5 years of progressive experience in a hotel or a related field, or a 4-year college degree and at least 1 to 2 years of related experience.
  • Supervisory experience required.
  • Ability to work a flexible schedule, including evenings, weekends, and holidays.
  • Must be proficient in Windows Operating Systems and company-approved spreadsheets and word processing.
  • Must be able to convey information and ideas clearly, both verbally and in writing.
  • Must be able to evaluate and select among alternative courses of action quickly and accurately.
  • Must work well in stressful, high-pressure situations.
  • Must be effective in handling problems in the workplace, including anticipating, preventing, identifying, and solving problems as necessary.
  • Must be effective at listening to, understanding, and clarifying the issues raised by co-workers and guests.
  • Must be able to work with and understand financial information and data, including basic arithmetic functions.
  • Must maintain composure and objectivity while under pressure.
