Job Summary

The Executive Sous Chef is a key member of the hotel's culinary team, reporting directly to the Executive Chef. This role is responsible for assisting in the efficient operation of food production areas, ensuring the highest standards of quality and presentation in all food items. The Executive Sous Chef will work closely with the Executive Chef to supervise and assist in the preparation of all food items based on standardized recipes, while maintaining a clean, safe, and organized kitchen environment.

Responsibilities
  • Leadership and Supervision: Supervise and assist in the preparation of all food items, ensuring that all kitchen personnel fulfill their job functions appropriately.
  • Menu Planning and Execution: Create menus and food presentation, ensuring that all dishes meet the hotel's high standards of quality and presentation.
  • Inventory Management: Maintain all kitchen inventories, ensuring that all stock is properly stored and rotated.
  • Cost Control: Work within monthly set food cost budget, adjusting food requisitions and controlling waste to minimize costs.
  • Customer Service: Address and resolve all customer problems in an efficient and effective manner, ensuring that all guests receive exceptional service.
  • Team Management: Assist in the achievement of departmental objectives and goals, expediting peak meal periods by maintaining a 'hands on' approach.
  • Quality Control: Monitor all Banquet and Catering activity, ensuring that all food outlets, buffets, stations, and food displays meet the hotel's high standards of quality, cleanliness, and food safety.
  • Training and Development: Assist in the training and development of kitchen personnel, ensuring that all staff members are properly trained and equipped to perform their job functions.
Requirements
  • Education: At least 5 years of progressive experience in a hotel or a related field, or a 4-year college degree and at least 1 to 2 years of related experience.
  • Skills: Proficient in Windows Operating Systems, Company-approved spreadsheets, and word processing. Supervisory experience required.
  • Personal Qualities: Ability to work a flexible schedule, convey information and ideas clearly, evaluate and select among alternative courses of action quickly and accurately, work well in stressful high-pressure situations, and maintain composure and objectivity while under pressure.
