Centrolina, a renowned Italian restaurant and private dining venue in downtown Washington DC, is seeking an exceptional Sous Chef to join our culinary team. Salary: $60,000 - $80,000 per year, with additional bonus potential.

Responsibilities:

  • Drive kitchen operations with a focus on seasonality, learning roots of authentic Italian cuisine, and executing contrasting and complimenting flavors of fresh local products.
  • Motivate and guide a team towards achieving operational excellence.
  • Develop and implement creative menus that showcase the best of Italian cuisine.
  • Manage inventory, purchasing, and scheduling to ensure seamless day-to-day operations.
  • Promote a culture of respect, empathy, and dignity within the kitchen team.

Requirements:

  • 3-5+ years of professional cooking experience in an upscale environment.
  • Strong understanding of all stations, including Garde Manger, Pasta, Sautee, Grill, and proper food temperatures.
  • Ability to butcher meat and fish; portion control.
  • Diversity commitment.
  • Focus on goals and objectives.
  • Drive to constantly improve and recognize their role as a leader.
  • Excellent communication skills.
  • Restaurant scheduling, inventory management, and conflict resolution.
  • ServSafe Food Handlers license.
