Overview

The Kitchen Manager at Cedar Fair Entertainment Company oversees the daily operations of the Central Kitchen and packaging room production under the direction of the Executive Chefs. This role is responsible for creating production lists, delegating tasks to other members of the culinary team, and ensuring that all requisitions are completed on time for delivery to various locations within the park.

Responsibilities

  1. Lead the culinary team in maintaining a high level of product quality, freshness, and presentation by conducting daily inspections and implementing standardization of production recipes.
  2. Ensure compliance with state and federal regulations regarding food storage, handling, and preparation, as well as maintain a clean and safe kitchen environment.
  3. Develop and implement training programs for kitchen personnel, focusing on culinary excellence standards and adherence to company policies.
  4. Collaborate with the purchasing and warehouse departments to maintain essential ingredients and supplies necessary for efficient production in the kitchen.
  5. Maintain accurate records and reports, including inventory management, cost control, and employee performance evaluations.
  6. Communicate effectively with the Executive Chef, Sous Chef, and other department heads to ensure seamless execution of daily operations.
  7. Contribute to menu development and implementation, ensuring alignment with company standards and goals.

Requirements

  • High school diploma or equivalent required; degree in culinary arts or related field preferred.
  • A minimum of 4-6 years of relevant work experience, with at least 3-5 years in supervisory/leadership roles.
  • Proven track record of managing budgets, inventory, and staff effectively.
  • Strong understanding of kitchen equipment maintenance, sanitation protocols, and safety procedures.
  • Ability to work flexible hours, including nights, weekends, and holidays, as needed.
  • ServSafe Food Manager certification and California Food Handler's Card required.

Estimated Salary: $67,875 - $78,700 per year, based on prior experience.
