Overview:

The Senior Culinary Operations Manager plays a pivotal role in ensuring the seamless operation of Knott's Berry Farm's Central Kitchen and packaging room production. Under the guidance of the Executive Chefs, this individual assists in hands-on safety and sanitation needs, production, and presentation of goods for the park, hotels, marketplaces, and catering events.

This key position oversees daily operations, creates production lists based on need, and delegates tasks to other members of the culinary team. Ensuring timely requisitions are met is crucial, as this impacts delivery to various outlets within the park. Any product shortages, staffing concerns, or safety issues must be promptly reported to Executive Chefs and management.

Responsibilities:

  • Manage the daily operations of the Central Kitchen and packaging room production under the direction of the Executive Chefs, ensuring smooth workflow and meeting business needs.
  • Develop and maintain knowledge of all products, applying culinary techniques consistently to ensure quality meets company standards through daily inspections before delivery. Standardize recipes for consistent quality and identify new techniques and presentations. Contribute to creating new and exciting festival products for themed events throughout the year.
  • Ensure compliance with Maintenance and Safety Standards, state and federal regulations regarding food storage, handling, and preparation, and other safety and sanitation codes involving culinary utensils, equipment, and overall cleanliness. Maintain Culinary Excellence Standards and train, motivate, and manage kitchen personnel as assigned.
  • Collaborate with Purchasing and Warehouse to maintain essential ingredients and supplies necessary for efficient production in the Kitchen. Assist Executive Chefs in completing transfers from CP Kitchen and Packaging Room to outlets throughout the park, including Catering and In-park needs.
  • Provide counsel to team members, ensuring adherence to policies and procedures, and ensure departmental standards are followed. Create a positive work environment by leading through example and supervise hourly staff, providing performance reviews, coaching, and re-training as needed. Monitor business flow and report any needs to the Executive team.
  • Continuously inspect the quality of materials and condition of equipment used for cooking, following established standard operating procedures for reporting repairs and/or equipment failure to relevant departments. Inform the Executive Chef of pertinent information and any irregularities occurring in the CP Kitchen operation.

Salary Details:

This position comes with a competitive salary range of $66,560 - $72,500 per year, commensurate with prior experience.
