Culinary Operations Manager

At Knott's Berry Farm, we are seeking an experienced Executive Chef to oversee the efficient management of our food and beverage outlets. This role requires a strong leader who can work alongside the VP and/or Director of Food & Beverage to reinforce our company's goals and expectations.
As an Executive Chef, you will be responsible for the overall management of our kitchens, including supervising cooks, coordinating special event operations, and monitoring food and labor costs. You will also be responsible for ensuring safety, sanitation, food production, and quality assurance within our parks.
Key Responsibilities:
• Hands-on management: Implement and enforce departmental policies and procedures, assure staff compliance with standards, and manage key culinary associates through planning and scheduling of work assignments and performance development.
• Inventory management: Oversee inventory of food products, coordinate product ordering and receiving, and maintain clean and orderly kitchens in compliance with health regulations.
• Quality control: Perform regular product testing to ensure consistency of ingredient profiles, product specification, and quality presentation. Provide training and development to all culinary staff to maintain the highest standard of production and food quality.
• Leadership: Act as a role model, provide guidance, and delegate tasks effectively. Plan menus, catering packages, and daily specials while maintaining financial responsibility for the menu mix. Analyze menu and food costs and prepare cost-efficient menus/specials.
Estimated Salary: $120,000 - $155,000 per year based on experience.
To succeed in this role, you should have at least 8-10 years of experience as an Executive Chef, preferably with a degree in Culinary Arts or related field. Strong leadership skills, ability to work without direct supervision, and proficiency in computer software programs like Microsoft Word and Excel are essential.
