Position Overview
The Vice President of Culinary Excellence reports directly to the Executive Chef and is accountable for two primary areas: Culinary Production and Culinary Operations within the park. This role involves collaborating with department leaders to plan and implement innovative food and beverage initiatives, leading culinary teams in training and execution, and serving as a culinary authority who establishes standards for excellence.
Key Responsibilities
- Mentor and develop senior culinary staff.
- Create training programs for chefs and managers utilizing vendor resources and internal best practices.
- Conduct food tastings and assess food presentations.
- Establish food specifications and oversee sustainability initiatives.
- Maintain a comprehensive understanding of restaurant and food service financials, including labor and food costs.
- Stay updated on culinary trends and address any food quality issues promptly.
- Provide culinary guidance to chefs and operations managers.
- Collaborate with other departments to identify and address challenges and opportunities.
- Ensure compliance with all food safety regulations and company policies.
- Conduct training programs to enhance culinary skills and foster a positive work environment.
Qualifications
- A minimum of 12 years of progressive experience in culinary services.
- A Culinary Arts degree is preferred.
- Required food manager certification.
- Advanced knowledge of culinary arts and food handling regulations.
- Strong communication and organizational skills.
