Job Overview

The Beverage Operations Manager at Hard Rock is accountable for overseeing the daily functions of the bar, including special events and optimizing revenue opportunities. This role also entails acting as the Manager on Duty and nurturing relationships with established VIP clientele.

Key Responsibilities

Qualifications:

  • Minimum of 3 years of progressive experience in hospitality or a related sector.
  • Preferred supervisory experience.
  • Ability to communicate information and ideas effectively.
  • Quick and accurate evaluation of alternative courses of action.
  • Ability to perform well in high-pressure situations.
  • Maintain composure and objectivity under stress.
  • Effectively handle workplace challenges, including anticipating, preventing, identifying, and resolving issues.
  • Proficient in financial data analysis and basic arithmetic.
  • Skilled in listening, understanding, clarifying, and addressing concerns from colleagues and guests.
  • Proficient in Windows operating systems and company-approved software.

Responsibilities:

  • Engage with guests and staff in a friendly, attentive, and service-oriented manner.
  • Adhere to attendance standards as per company scheduling requirements.
  • Uphold high standards of personal appearance and grooming, including wearing the appropriate uniform.
  • Comply with company standards and regulations to promote safe and efficient operations.
  • Meet certification requirements relevant to the position, including Food Handlers and Alcohol Awareness.
  • Maintain a warm and welcoming demeanor consistently.
  • Familiarize oneself with the hotel’s organizational structure and departmental functions.
  • Train all Food and Beverage/Banquet staff according to company standards.
  • Ensure follow-through on all guest requests, complaints, and incidents.
  • Motivate, coach, counsel, and discipline Food & Beverage personnel in accordance with company policies.
  • Review staff hours for payroll and submit timely to Accounting.
  • Participate in weekly staff meetings and provide training as needed.
  • Assist in the hiring process for Food & Beverage staff.
  • Prepare employee shift schedules based on business forecasts and budget guidelines.
  • Ensure timely completion of wage progress and productivity reports.
  • Conduct performance appraisals as required.
  • Implement all company policies and house rules.
  • Assist in developing and executing Food and Beverage promotional initiatives.
  • Monitor beverage costs to align with budget expectations.
  • Ensure compliance with training standards.
  • Maintain proper procedures for purchase orders and invoice processing.
  • Develop and promote sales initiatives, including upselling programs.
  • Uphold service standards across the Food and Beverage/Banquet Department.
  • Participate in required Manager on Duty coverage.
  • Generate necessary reports in accordance with company standards.
  • Assist with Food and Beverage forecasting and budgeting.
  • Ensure staff remains attentive, friendly, and courteous at all times.
  • Conduct quarterly inventory assessments and plan purchases accordingly.
  • Adhere to credit policies as per company standards.
  • Respond to negative market trends with food and beverage promotions.
  • Organize and lead monthly department meetings.
  • Attend daily operational meetings.
  • Manage beverage purchasing as required.
  • Conduct monthly beverage inventory and reconciliations.
  • Ensure food quality and presentation meet company standards.
  • Foster open communication with all staff and promote a motivating work environment.
  • Oversee Banquet department operations.
  • Utilize the hotel’s P.O.S. system for report generation and analysis.
  • Establish and maintain a key control system.
  • Complete monthly menu analysis for corporate review.
  • Monitor Food and Beverage cash discrepancies.
  • Assist in implementing emergency procedures with management.
  • Maintain organized documentation for purchases and reports.
  • Complete all correspondence efficiently.
  • Engage in all-employee meetings and required functions.
  • Maintain communication with all employees to ensure a collaborative environment.
  • Make necessary P.O.S. adjustments as required.
  • Manage Lost and Found items according to standards.
  • Maintain required stock levels.
  • Review food sales for accuracy daily.
  • Perform additional duties as assigned by management.
