Executive Culinary Manager

About the Role:
Mandarin Oriental, New York is seeking a highly skilled and experienced Sous Chef to join our culinary team. As a key member of our kitchen operations, you will be responsible for managing and leading the culinary team in MO Lounge and In-Room Dining.
Key Responsibilities:
- Lead, teach, and correct employees under the guidance of the Chef de Cuisine, Executive Chef, and Executive Sous Chef.
- Prepare high-quality dishes in accordance with quality, availability, and seasonality, and ensure market lists are completed on a daily and weekly basis.
- Strive for perfection in the outlet, achieving 100% guest satisfaction.
- Assist in menu planning and implementation, ensuring food standards and presentation are maintained and improved.
- Organize food production in a cost-effective and hygienic manner, generating weekly schedules for kitchen colleagues.
- Assist in recruitment, training, coaching, and corrective actions of all kitchen staff.
- Constantly strive to improve operating procedures, reducing costs without affecting the level of service or product received by guests.
- Maintain and monitor Safe and Sound Procedures, using the Employee Handbook to understand consistent communication rules and regulations.
- Develop Standard and Procedures, being an effective listener before acting.
- Attend meetings when designated to do so, controlling and being accountable for achieving both Food and Labor Cost Goals.
Requirements:
- Minimum of 5 years in luxury hotel culinary experience.
- Minimum of 2 years management experience in a high-volume or fine dining establishment.
- Experience in Union environment coaching union colleagues.
- Experience in Multi-cultural cuisines.
- Ability to multi-task, work AM and PM, and possess a good written and verbal command of the English Language.
- Possess a pleasant and outgoing personality, thorough knowledge of cooking fundamentals, and working knowledge of advanced techniques.
- Able to organize large parties, extensive knowledge of kitchen equipment, and working knowledge of mathematics for recipes, ordering, and financial research purposes.
- Working knowledge of computers and basic software, ability to work in high-stress conditions, and dictate responsibility, pay attention to detail, handle multiple tasks, and show a high level of patience.
Physical Requirements:
- Stand/Walk - 12 hours a day.
- Sit for hours a day.
- Lift or Carry 0-20 pounds frequently, 21-50 pounds occasionally, and over 50 pounds occasionally.
- Bend frequently, squat frequently, kneel occasionally, climb occasionally, reach above shoulders occasionally, and perform repetitive hand motions frequently.
Salary: $75,000 to $80,000 yearly.
