ROLE RESPONSIBILITIES AND DUTIES:

Ensure the sanitation of the back of house (BOH) area.

Develop and implement a comprehensive weekly and monthly cleaning schedule involving all BOH staff.

Delegate deep cleaning assignments to cooks scheduled during maintenance nights for carpet and hood cleaning.

Establish a checkout system for cooks, monitoring both inventory levels and kitchen cleanliness.

Oversee the operations of the BOH.

Facilitate training and mentorship for all new culinary staff.

Ensure adherence to food rotation protocols and prevent overstocking of ingredients.

Create and maintain a waste tracking sheet.

Monitor portion control practices.

Regularly check and maintain all thermometers in refrigeration units to ensure functionality.

Verify temperatures of both cold and hot food items to ensure compliance with safety standards.

Conduct inventory counts and analyze food cost metrics.

Manage product procurement processes.

UNIFORM CODE:

Employees are expected to maintain a neat, clean, and professional appearance (including a clean uniform for each shift, well-groomed nails, good personal hygiene, and refraining from chewing gum while on duty).
