The Executive Sous Chef is a key member of the culinary team at H-E-B, responsible for overseeing the daily operations of the kitchen and ensuring the highest quality of food products. This role requires strong leadership and management skills, as well as a deep understanding of culinary operations and food safety protocols.
Key Responsibilities:
- Oversee the daily job responsibilities of line cooks and prep cooks to produce high-quality food products for Chef's Case, Cafe on the Run, and Catering.
- Assist in scheduling partners to meet budgetary guidelines and ensure efficient kitchen operations.
- Maintain a clean and sanitary work area throughout the kitchen, walk-ins, and storage areas.
- Develop and implement new product development and menu costing strategies to drive sales and revenue growth.
- Collaborate with the Executive Chef to develop and implement kitchen operations strategies to improve efficiency and productivity.
- Supervise, train, and cross-train kitchen staff to ensure a high level of culinary expertise and customer service.
- Monitor and control inventory, ordering, and shrinkage to minimize waste and optimize resources.
- Ensure compliance with food safety protocols and maintain high standards of sanitation and cleanliness throughout the kitchen.
- Assume responsibility for total kitchen production in the absence of the Executive Chef.
Requirements:
- 3+ years of experience as an Executive Sous Chef or equivalent role.
- Proven leadership experience in a complex environment with multiple direct reports.
- Professional culinary training or equivalent work experience.
- Excellent customer service skills and ability to work effectively with cross-functional teams.
- Ability to maintain an efficient operation and troubleshoot and report any malfunctions of equipment.
- Ability to work a flexible schedule, including opening, closing, and weekend shifts.
