Culinary Operations Supervisor
GENERAL OVERVIEW
The Culinary Operations Supervisor is tasked with overseeing and coordinating the daily functions of the kitchen, adhering to the standards set by Pechanga Resort Casino (PRC). This role involves ensuring the timely execution of all culinary projects and tasks, in line with established protocols. The supervisor will play a key role in the development and execution of the staffing and scheduling framework for the kitchen team. Additionally, this position provides guidance to team members to enhance job performance and contributes to performance evaluations.

All team members are expected to demonstrate a Four Diamond dedication to customer service by upholding the Quality Standards established by Pechanga Resort Casino.
PRIMARY RESPONSIBILITIES
- Guarantee that all food items and products are consistently prepared and served in accordance with established recipes, portion sizes, cooking methods, and presentation standards.
- Assign daily tasks to kitchen line staff to ensure efficient workflow.
- Assess labor requirements and associated costs.
- Provide orientation and enforce departmental policies and procedures, while overseeing the training of new kitchen personnel.
- Organize and complete all necessary documentation, including forms and reports, in a timely manner.
- Ensure all kitchen equipment is maintained in a clean and functional state through regular inspections and adherence to preventative maintenance schedules.
- Supervise and ensure that performance evaluations for team members are conducted and documented promptly.
- Manage product ordering based on predetermined specifications, controlling food costs and usage through proper requisitioning and waste management practices.
- Maintain confidentiality and integrity when handling team member information within departmental records.
- Assist the Head Chef in managing the operational aspects of the kitchen to meet established standards.
- Possess the ability to work across all kitchen stations.
- Support in the planning, preparation, and presentation of all menu items, while training kitchen staff on their execution.
- Conduct daily checks of storage areas to ensure proper rotation and usage of food items.
- Uphold high standards of safety and sanitation throughout the kitchen.
- Perform other duties as assigned.
ACCOUNTABILITY:
This role is responsible for managing the work of assigned kitchen team members, carrying out supervisory duties in accordance with organizational policies and applicable regulations. Responsibilities include recruiting, hiring, and training staff; planning, assigning, and reviewing work; evaluating performance; rewarding and addressing employee concerns; and resolving issues.
QUALIFICATIONS AND GUIDELINES
EXPERIENCE/TRAINING/EDUCATION: A high school diploma or GED is required; a minimum of 5 years of relevant experience is preferred for successful performance in this role.
COMMUNICATION SKILLS: Ability to read and interpret documents such as safety guidelines, operational instructions, and procedural manuals. Capable of writing routine reports and correspondence. Proficient in effectively communicating before groups of customers or employees.
MATHEMATICAL SKILLS: Ability to perform calculations involving discounts, interest, proportions, percentages, and basic algebra and geometry concepts.
REASONING ABILITY: Ability to apply common sense to follow instructions provided in written, oral, or diagrammatic form. Capable of addressing problems involving multiple concrete variables in standardized situations.
SKILLS/ABILITIES:
- Proficient in Excel, Word, and kitchen management software.
- Strong understanding and practical application of health and safety regulations.
- Comprehensive knowledge of kitchen and culinary operations.
- Excellent interpersonal and organizational skills.
- Ability to work in a smoking environment.
- Willingness to work any day of the week and at scheduled shifts.
- Fluent in English, with strong speaking, writing, and comprehension skills.
CERTIFICATES, LICENSES, REGISTRATIONS:
Must be able to obtain and maintain a class A gaming license from the relevant authority and complete the Food Handler Certification course.
