Job Summary

We are seeking a highly skilled and experienced Executive Chef Assistant to join our culinary team at Pechanga Resort Casino. As a key member of our kitchen staff, you will be responsible for overseeing the daily operations of our restaurant, ensuring that all food and products are consistently prepared and served to the highest standards.

Key Responsibilities
  • Supervise and monitor the daily operations of the restaurant, ensuring compliance with Pechanga Resort Casino regulations.
  • Develop and implement the department's staffing and scheduling plan, ensuring that all team members are properly trained and equipped to perform their duties.
  • Provide direction and guidance to subordinates, helping them to improve their job performance and contribute to the team's success.
  • Ensure that all equipment is properly maintained and in excellent working condition, adhering to preventative maintenance programs.
  • Oversee the preparation and serving of all food items and menus, ensuring that they meet the highest standards of quality and presentation.
  • Conduct daily inspections of walk-in coolers and freezers to ensure proper rotation, storage, and usage of all food items.
  • Maintain a high level of safety and sanitation in the kitchen, adhering to all relevant health and safety standards.
  • Perform other duties as assigned by the Chef or other senior management staff.
Accountability

This position is responsible for managing the work of the assigned team members, carrying out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees, planning, assigning, reviewing, and directing work, evaluating and appraising performance, rewarding and disciplining employees, addressing complaints, and resolving problems.

Qualifications and Guidelines
  • High school diploma or general education degree (GED) required; at least 5 years of experience preferred.
  • Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals.
  • Ability to write routine reports and correspondence, and speak effectively before groups of customers or employees.
  • Ability to calculate figures and amounts, and apply concepts of basic algebra and geometry.
  • Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form.
  • Ability to deal with problems involving several concrete variables in standardized situations.
Skills and Abilities
  • Excel, Word, Stratton Warren, Kronos.
  • Firm understanding and practical application of Health and Safety standards.
  • Knowledge of all aspects of kitchen and culinary operations.
  • Strong interpersonal and organizational skills.
  • Ability to work in a smoking environment.
  • Ability to work any day of the week and scheduled shift.
  • Fluent English speaking, writing, and comprehension skills.
Certificates, Licenses, and Registrations
  • Ability to obtain and maintain a Class A gaming license from the Pechanga Gaming Commission.
  • Must complete Pechanga's Food Handler Certification course.
