**Job Summary**
We are seeking a highly skilled and experienced Executive Sous Chef to join our culinary team at Nemacolin Woodlands Resort. As a key member of our kitchen staff, you will be responsible for overseeing the preparation and presentation of all food items, ensuring exceptional quality and consistency in every dish.
**Key Responsibilities:**
- Establish and maintain menu forecasts based on business forecasts, previous experience, and seasonal demand.
- Verify that all portion sizes, quality standards, and departmental rules and policies are maintained by kitchen associates.
- Supervise and assist in the production of all food items, ensuring timely and efficient service.
- Assist the Chef de Cuisine in placing orders for meat, fish, and produce, as well as scheduling kitchen associates.
- Take accountability for guest complaints and ensure prompt resolution, reporting issues to the Chef de Cuisine.
- Verify and assist in the placement of requisitions for food items, chemicals, liquors, and paper.
- Complete daily line-ups with servers and restaurant managers to review special requests and provide explanations.
- Supervise kitchen preparation and service of all stations.
**Requirements:**
- Degree from a post-secondary Culinary Arts Training Program (desirable)
- Minimum of three years of experience in food preparation
- Ability to speak English fluently and clearly, with excellent listening and communication skills
- Ability to read and write to facilitate communication
- Flexibility to work varied hours, including weekends and holidays
