**Job Summary**

JC Resorts is seeking a highly skilled and experienced Culinary Operations Manager to join our team at the Rancho Bernardo Inn. As a key member of our food and beverage team, you will be responsible for overseeing the daily operations of our kitchen, ensuring exceptional quality and service to our guests.

**Key Responsibilities:**

  • Directly supervise kitchen staff to ensure optimal departmental efficiency, productivity, and quality standards.
  • Assist in creating and testing new recipes and menu design to enhance our culinary offerings.
  • Supervise the day-to-day operation of the kitchen, including food preparation, presentation, and service.
  • Train and support kitchen employees to maintain high levels of employee morale and department productivity.
  • Coordinate service, pass, and pick-up of food to ensure seamless execution.
  • Inspect the cleanliness of the line floor and kitchen stations to maintain a safe and healthy environment.
  • Oversee the proper and efficient preparation of food for our restaurants, ensuring quality and quantity standards are met.
  • Maintain a current computer listing of all scheduled business to ensure accurate forecasting.
  • Ensure foods are stored and served at proper temperatures to prevent foodborne illness.
  • Taste and monitor presentation of all food served to guests, ensuring appearance and quality are consistently maintained.
  • Report all needed equipment repairs to maintain a well-maintained kitchen environment.
  • Assist cooks in preparing foods on the line during service to ensure timely delivery.
  • Follow all specified procedures to open or close the kitchen, ensuring a smooth transition.
  • Assume all duties of the Sous Chef in their absence to ensure continuity of operations.
  • Assist with inventories and ordering to maintain optimal stock levels.

**Requirements:**

  • English fluency required; Spanish fluency helpful.
  • Culinary graduate with knowledge of all facets of kitchen operations and production.
  • Minimum two years prior hotel/kitchen experience, including a minimum of one year of supervisory experience.
  • Familiar with OSHA, local Department of Health regulations, and Covid protocols.
  • Food handlers card required upon hire.

**Preferred Qualifications:**

  • Demonstrated ability to train staff and ensure luxury resort customer service.
  • Strong written and verbal communication skills.
  • Detail-oriented and organized, with a focus on efficiency and productivity.
  • Safety-minded and committed to maintaining a high-quality kitchen environment.
  • Good team player with a customer service focus.
  • Ability to effectively manage staff to maintain a high level of morale and productivity.

**Working Environment:**

The successful candidate will be able to work weekdays, weekends, and holidays, with the ability to work indoors and outdoors as needed. The kitchen environment can be fast-paced and physically demanding, with frequent short trips to the refrigerator, freezer, and storeroom.
