POSITION SUMMARY:

Graspa Group, a prominent name in the South Florida dining scene, is launching a new fine dining Italian establishment. We are in search of a skilled and experienced Sous Chef to oversee daily kitchen operations. This role is pivotal in maintaining a hospitality-first ethos while delivering elevated food and beverage experiences across multiple revenue streams.

The Sous Chef will serve as the second-in-command in the kitchen, managing culinary staff and stepping in for the Executive Chef when necessary.

Key Responsibilities
  • Collaborate with the Executive Chef to create and refine menus that highlight seasonal ingredients and cater to customer preferences.
  • Assist in the planning and execution of food preparations for daily service and special occasions.
  • Lead and manage kitchen personnel, ensuring compliance with food safety and hygiene protocols.
  • Mentor and train junior kitchen staff, offering support and guidance in various culinary tasks.
  • Oversee food preparation processes, ensuring consistency and excellence in taste, presentation, and portioning.
  • Monitor inventory levels and assist in supply ordering to meet kitchen requirements.
  • Maintain a clean, organized kitchen environment, adhering to sanitation standards and ensuring equipment is well-maintained.
Qualifications
  • A minimum of 4 years of culinary experience, particularly in high-volume dining settings.
  • Strong culinary skills with a focus on innovative and delectable dish creation.
  • Demonstrated ability to manage a team effectively in a fast-paced environment.
  • Comprehensive knowledge of kitchen operations, including food preparation, cooking techniques, and sanitation practices.
  • High creativity and adaptability to changing culinary demands and preferences.
  • Excellent communication and leadership abilities, capable of motivating and inspiring team members.
  • Willingness to work evenings, weekends, and holidays as required.
  • Previous experience in Italian cuisine is essential.
