A comprehensive understanding of daily culinary functions, including rotating menus and service strategies, is essential. Additional responsibilities may encompass assisting kitchen staff with preparation tasks, creating end-of-service snacks for dining staff, and maintaining cleanliness and organization as directed by management.
Key Responsibilities
- Prepare the pass with daily garnishes.
- Expedite all savory orders during service.
- Effectively communicate with the Chef regarding service operations.
- Collaborate with management during service for optimal efficiency.
- Monitor ticket times and liaise with chefs as needed.
- Organize and gather necessary plates and service items.
- Review and edit daily menus.
- Create culinary cards to convey essential kitchen information to the dining area.
- Compile dietary restriction sheets for kitchen staff.
- Prepare daily snacks for dining room employees at the end of shifts.
- Document and track guest information in the company system.
- Communicate with culinary managers regarding special menus or dishes.
- Foster friendly communication with other departments.
- Effectively relay service plans during operational hours.
- Generate weekly reports for culinary management to assist in planning.
- Assist in training junior dining staff on operational protocols.
- Maintain cleanliness and organization of the pass area and culinary equipment.
- Collaborate with the evening kitchen team to ensure proper kitchen breakdown.
- Perform other assigned duties as necessary.
Qualifications
Essential
- High school diploma or GED; Associate's degree in culinary arts preferred.
- Servsafe certification required.
- Strong organizational and prioritization skills.
- Understanding of the culinary brigade system.
- Positive attitude and approachability for team members.
- Desire for continuous improvement in culinary operations.
Preferred
- Associate's Degree in Culinary Arts.
- Creative mindset.
- Bilingual in Spanish and English.
Skills
- Excellent organizational and communication abilities.
- Ability to remain composed under pressure.
- Proficient problem-solving skills.
- Familiarity with Microsoft Office Suite, particularly Excel and Word.
- Sense of urgency in service.
- Proactive attitude towards resolving issues during service.
Physical Requirements
- Ability to lift up to 50 lbs.
- Capability to stand for extended periods (8-10 hours).
- Exposure to hot surfaces, sharp tools, and varying temperatures.
- Willingness to work hours beyond a standard workweek.
