Executive Kitchen Leader - Marcus Hotels

As an Executive Kitchen Leader, you will play a pivotal role in the culinary operations, ensuring the highest standards of food quality and presentation are met.

Key Responsibilities:

1. Oversee and manage daily kitchen operations, ensuring efficiency and quality.

2. Prepare a variety of dishes for dining and buffet services, adhering to established recipes.

3. Conduct visual inspections of food items to ensure optimal taste, color, and presentation.

4. Supervise kitchen staff, providing training, guidance, and performance evaluations.

5. Manage the ordering, receiving, and storage of food products to ensure freshness and quality.

6. Implement proper food rotation practices to minimize waste and spoilage.

7. Ensure all kitchen equipment is maintained and sanitized according to health standards.

8. Perform additional tasks as needed, including special requests and buffet setups.

9. Schedule staff according to the restaurant's operational needs and forecasts.

Qualifications:

1. Comprehensive knowledge of cold food preparation techniques.

2. Familiarity with safety and sanitation regulations in food service.

3. Extensive experience with kitchen equipment such as slicers, mixers, and food processors.

4. Basic math skills for recipe calculations and portioning.

5. Proficiency in English for effective communication and documentation.

6. Manual dexterity to operate kitchen tools and equipment safely.

7. Capability to lift and transport goods weighing up to 200 lbs.

8. Ability to work in confined spaces and under varying temperature conditions.

9. High school diploma preferred; culinary education or apprenticeship is a plus.

10. A minimum of two years in a supervisory role within a similar culinary environment, with prior experience as a chef de partie or lead cook.

11. Innovate by creating specials using available ingredients.

12. Assist in minimizing food waste through effective management practices.
