As an integral part of our culinary team, the Assistant Kitchen Manager plays a vital role in the management of daily kitchen operations. Collaborating closely with the Executive Chef, this position ensures that all food products meet the high standards set by HRA. The Assistant Kitchen Manager is responsible for supervising kitchen staff and stepping in for the Executive Chef when necessary.
Key Responsibilities:
- Oversee the preparation and presentation of breakfast, lunch, and dinner to guarantee quality and portion control.
- Utilize standardized recipes to prepare and coordinate all meals.
- Assist in the planning and preparation for the upcoming day's menu.
- Engage in pre-meal discussions with food service staff to clarify daily menu details.
- Maintain cleanliness and organization in stock rooms, coolers, and freezers, ensuring all food is properly labeled and stored in compliance with health regulations.
- Ensure adequate staffing levels during each shift and manage absences to maintain operational efficiency.
- Contribute to menu and recipe innovation.
- Support food ordering and inventory management.
- Help maintain budgetary compliance for daily food expenditures.
- Implement effective loss prevention strategies.
- Assist in the training and scheduling of kitchen personnel in line with HRA's human resources policies.
- Coordinate and execute special events as needed.
- Uphold cleanliness and food safety standards in accordance with local health department regulations.
- Provide training and mentorship to all kitchen staff.
- Engage with residents daily to enhance their dining experience.
- Promote a safe working environment for all associates and residents.
- Disclose any medications that may affect job performance.
- Demonstrate leadership by embodying the CORE Values through servant leadership.
- Foster teamwork and support the company's philosophy.
- Participate in community meetings and Life Enrichment activities when possible.
- Complete all mandatory training courses as part of HRA University.
- Consistently perform job duties in a reliable and predictable manner.
- Understand the procedures for reporting missing persons using the Safe Return program or equivalent.
- Contribute to maintaining a safe and secure environment for all community residents.
- Minimum of six months to one year of relevant experience or a combination of culinary education and experience.
- SERV-SAFE Certification or equivalent is required.
- Must obtain and maintain any necessary local, state, or county food handling and sanitation licenses or certifications.
