Culinary Director

As an Executive Chef - Specialty Restaurant at Marriott International, you will be responsible for leading the culinary team in the production of high-quality dishes, ensuring exceptional customer service, and maintaining a clean and safe kitchen environment. This role requires a strong passion for culinary arts, excellent leadership skills, and the ability to work effectively in a fast-paced environment.
Key Responsibilities- Culinary Leadership
- Develop and implement menus, recipes, and cooking techniques to ensure consistency and quality of dishes.
- Supervise and train kitchen staff to ensure they are knowledgeable about menu items, ingredients, and cooking methods.
- Monitor kitchen operations to ensure efficiency, productivity, and safety standards are met.
- Customer Service
- Ensure that all guests receive exceptional service, including prompt and friendly service, accurate orders, and high-quality food presentation.
- Address guest complaints and concerns in a professional and courteous manner.
- Collaborate with other departments to ensure seamless service and high guest satisfaction.
- Inventory Management
- Manage inventory levels, including ordering and receiving supplies, to ensure that the kitchen is well-stocked and that waste is minimized.
- Monitor and control food costs to ensure that they are within budget.
- Develop and implement strategies to reduce waste and improve efficiency.
- Team Management
- Recruit, train, and develop a high-performing team of culinary professionals.
- Provide coaching, feedback, and guidance to team members to ensure they are meeting performance expectations.
- Conduct performance evaluations and make recommendations for promotions, transfers, or terminations.
- Compliance and Safety
- Ensure that all kitchen staff are aware of and comply with food safety and sanitation regulations.
- Conduct regular safety inspections to identify and address potential hazards.
- Develop and implement procedures to prevent accidents and injuries in the kitchen.
- Education and Experience
- Bachelor's degree in Culinary Arts or related field, or equivalent experience.
- Minimum 4 years of experience in a high-volume kitchen, with at least 2 years in a leadership role.
- Skills and Qualifications
- Excellent leadership and communication skills.
- Strong knowledge of culinary techniques, ingredients, and menu planning.
- Ability to work effectively in a fast-paced environment and prioritize tasks to meet deadlines.
- Strong problem-solving and analytical skills.
- Ability to work effectively with a diverse team of culinary professionals.
