Job Responsibilities:

Help oversee Gjusta's pastry department with guidance from the Pastry Chef: daily production, product development, employee training and growth, pastry wholesale, and retail program, and accounting for any production issues or loss of product.

Primary work is by hand to produce desserts and pastry for Gjusta, all Gjelina Group restaurants and concepts and wholesale clients.

Duties also include best utilization of seasonal produce, creating/updating information sheets for employee knowledge, and use of our bakery software Flexibake to maintain wholesale items, costings and in house par levels plus tracking all wastage.

Responsibilities include, but are not limited to:
  • Reporting for duty on time
  • Ensuring meal and rest periods are provided
  • Motivating staff and resolving problems;
  • Ensuring deep cleaning items are being accomplished
  • Maintaining high standards of appearance and hygiene that include clean clothes, nails, and hair and no heavy perfumes/colognes.
  • Preparing all food items as directed in a sanitary and timely manner
  • Maintaining recipes, portion controls, and presentation specifications
  • Cleaning and maintaining station: safety, sanitation, organizational skills
  • Understanding and knowledge to properly use and maintain all equipment in the station
  • Quality assurance of product and communication when necessary
  • Managing the cleaning, sanitation, and organization of the kitchen, walk-in coolers, and all storage areas
  • Communicating any and all necessary repairs to equipment
  • Actively involved in the upkeep and cleanliness of the entire property
  • Commitment to quality service.

Knowledge, Skills and Attributes
  • Knowledge of all dishes on the menu, to be able to identify them and to know their ingredients
  • Ability to use all relevant items of equipment
  • Understanding, knowledge, and ability to comply with safety, sanitation and food handling procedures
  • Ability to prioritize work activities, provide accurate information and assistance to any management or colleagues' request in a timely and courteous manner
  • Ability to keep calm when faced with any unusual situations
  • Ability to perform the essential functions of the job
  • Performs other duties as assigned by Pastry Chef

Physical Demands/Working Environment
  • Able to walk and stand for long periods of time (8 - 12 hours)
  • Must be able to move, pull, push, carry or lift of up to 30 pounds
  • Must be able to seize, grasp, turn and hold objects with hands regularly and in frequent or repetitive motions
  • Must be able to reach items at varying height levels (on shelves, on ground, etc.) or feel comfortable using a ladder
  • Occasionally kneel, bend, crouch and climb as required
  • Must be able to work in conditions of environmental exposure to cold, heat, and water
  • Able to work in a fast-paced environment

  • CA Manager Food Handler Certification - Food Handling & Sanitation Awareness

  • Knowledge of the Department of Health requirements for operation
